How to Make ARMENIAN EECH (Հայկական Իչ) Bulgur Salad | Eats With Gasia

  • In this video I make Armenian Eech / Bulgur salad!
    What you'll need:
    1 batch mint
    1 batch green onion
    1 jalapeño
    5 tomatoes
    1 white onion
    2 cups bulgur
    1 table spoon tomato paste
    2 table spoons pepper paste
    Salt
    Cumin
    Olive oil

    One of my all time favorites. Loved how you chopped the jalapenos seeds and all to make it really spicy. You know what would go great with this? The tahn you made in the last video.

    I eat the Arminian bulgur salad yesterday and it is almost the same dish we make in Algeria but we use couscous instead of bulgur.

    you forgot the lemon and pomegranate molasses try it will be delicious add one lemon juice and one treble spoon molasses 👍

    Here's a written recipe that I have culminated from watching a few Eech recipes on RUclips (:
    Armenian Eech Recipe
    Ingredients:
    1 batch mint
    1 batch green onion
    1 jalapeño or anaheim pepper
    5 tomatoes
    1 white onion
    1 bunch of scallions
    2 cups of #1 size bulgur
    1 tablespoon tomato paste
    2 tablespoons pepper paste
    ½ cup lemon juice
    ½ cup olive oil
    ½ tsp cumin
    1 tsp of sumac
    1 tsp sugar/molasses (optional)
    Salt to taste (pastes already have salt)
    Directions:
    Grate 3 tomatoes, set aside individually.
    Chop white onion, set aside individually.
    Chop parsley and mint finely, set both aside together.
    Chop the one bunch of scallions, set aside individually.
    Chop remaining two tomatoes, set aside individually.
    Chop the Jalapeno finely, set aside individually.
    Saute the onion for 5 minutes with olive oil, stir occasionally.
    Add jalapenos and saute for about a minute.
    Add the grated tomatoes and allow the mixture to come to a boil.
    Add the bulgur, tomato and pepper paste, lemon juice, cumin, sumac, as well as salt and sugar (both optional).
    Mix until homogeneous.
    Add chopped tomatoes, herbs and scallions.
    Cover with lid and let rest for 15 minutes.
    Serve with lettuce leaves, and eat like you would a lettuce wrap or eat eech as is.
