Hello! I'm already writing my bachelor's thesis about probiotics and this video was a beautiful way to submerge myself into the information i've been processing these days. I enjoyed this so much.
Next project for you guys is kefir. Saccharomyces cerevisiae from Pasteur's brewing fungi and other types of Lactobacilli would be a nice topic to continue with.
full fat yogurt (with no chemicals or sugar added), eaten with a bit of fruit like berries, has got to be one of the healthiest and most convenient and probably quitte economical food for breakfast. and everything lasts a long time in the fridge/ freezer too.
if you're on a budget, you can make your own indefinitely from one store bought yogurt. There are Yogurt makers, but using summer heat or a heater works fine, just watch that it's in the right temperature range
@@noneyabidness7226 if it's too tart it's probably about timing and it's been warm too long. try different times or temperature. put it in the fridge as soon as it's not liquid anymore (tilt slightly and see if it's set) if there's whey (a sign that it's been too long) you can remove that to get rid of some sourness. and add flavors only right before consumption is best I think.
@@noneyabidness7226 Pria Pulida is right, the tartness is due to the build up of the lactic acid, the longer you let it ferment (at a fixed temp) the sourer it will get. Warmer temps will also make the fermentation go faster, it takes a bit of experimentation to get it just the way you like it, and of course without a good way to control the temperature it will come down to knowing when to cool it down based on the consistency rather than time.
Actually very few of the store-bought yoghurts have the lactobacillicus bulgaricus. So any "yoghurt" you'd make is just some fermented milk and not yoghurt.
7:10 Mechnikov was not just "satisfied" with yoghurt. In his 1911 book "Молочные микробы и польза, приносимая ими здоровью : (Ягуртъ)" he described his experience of treating paratyphoid with yoghurt along many other inspiring examples of yoghurt's benefits. (actually, this book must have had a French origin, but I haven't found one)
this was such an interesting episode :) i just wanted to thank the team for making these videos possible! they really help me unwind after a long day with the calming ambience, while i don’t feel bad because i’m learning things!
I love your channel, Journey to the Microcosmos!! In my opinion, streptococcus thermophilus and lactobacillus bulgaricus have the best relationship with each other ! Thanks to them, I can enjoy my daily bedtime yogurt snack every day !!
Shoutout the true MVPs of this video, Deboki, Hank, and James for making such wonderful content. I've been inspired to get a microscope as well as many others I'm sure by your channel. Thank you very much for your contribution to education and the sciences!
A lot of human foods were born as benefitial results of our ancestors "throwing everything to the wall" and see what sticked, lolz. Cheese has to be ome of the greatest results we have made in terms of food creation.
Thanks for this video, it was very interesting! I love the narration and the images. My family is cultivating Kefir. I would like a lot to learn more about it, maybe it might be an idea for a future video:)
Just got a microscope myself, tried looking at some store brand yogurt and... lol... the yogurt you guys used for this video is very active and looks much healthier than what I found. At 7:35 you see hundreds of the spherical bacteria, I was lucky to find four or five at any given time!
This story is on its surface is interesting to say the least but viewing yogurt bacteria under the microscope, is uneventful and uninspiring. Let us not forget that James is truly a master of microscopes.
Something strange that I have noticed with whey, the serum extracted from yogurt. Is that when I boil legumes with whey, after an hour or more the legumes are as strong as when raw or even more...
"They carried milk in bags made from animals." I was so ready for the next sentence to explain that the animals themselves were the 'container' for the milk, that they'd travel with the live animals as an easy way to preserve the milk.
I've seen yogurt under a microscope. It looked just as 'uninteresting' as this footage. This isn't a diss, I'm glad to know i didn't do anything wrong and also glad to learn the science
O yogurt fair, with creamy curd divine, Thou art a treat, a gift from nature’s hand. Thy cultured essence, flavors that entwine, Doth grace the palate, like a minstrel band. From humble milk, thou tak’st thy humble birth, Transformed by time and patient alchemy. Thy lactic artistry brings joy and mirth, In pots of clay, a taste of symphony. Thine ivory hues, a canvas pure and plain, Are adorned with fruits, both vibrant and sweet. Each spoonful savored, pleasure I attain, As senses dance, thy tangy notes compete. So let us raise a cup, with heartfelt cheer, To yogurt’s charm, a taste that brings us near. -ChatGPT
I illiterately have a yogurt sample on a slide on my desk... The images I've got with my microscope was as deceiving as the ones in this video. Don't try this at home... it's just not worth it. I better stick to my garden soil or pound water testing.
Tens of thousands of years humans have drank milk. So it makes perfect sense that we have to stop now. Because a crazy old rich guy thinks it's too hot
Ten thousand* And just because the Turks were busy domesticating cows doesn't mean everyone was doing it. Modern dairy farming didn't even take off until some crazy old rich guy said everyone should drink milk because it makes your bones grow strong 😅
The data show increased milk consumption in adult life is associated with increased rates of death and, in women, increased rates of bone and hip fracture. This effect is not seen with yogurt or soured milk! Yogurt is great!
The name is first known from the Uyghur people from the 10th century AD, 500 years before the first Turkish record of the name. Turkic but not Turkish.

I prefer kefir over yogurt but it's hard to find.

Any tips for giving it a better flavor? I've failed miserably trying to give it a vanilla flavor. It's always tart.

That pause after the statement that yogurt has "many names in different cultures"...
Pun intended?

The title translates to "Milk microbes and their health benefits: (Yoghurt)"
When I got to "yogurt spread through different cultures," I fully expected the next words to be, "...and vice versa." 😀

Yogurt is just lazy cheese.
There, I said it.
yogurt and cheese are absolutely different, yogurt (kiselo mlyako) has sour taste, cheese ( sirene ) has neutral taste.

Yeah, as a Bulgarian, this is all true. Here we are crazy about yogurt ;p (and why not? Its great!)
Bulgarian yogurt is amazing! Nice light consistency and a bit more tart than other types of yogurt.
@@GooberFace32 Yeah, at least most brands (there are always exceptions ;p) I also like the Greek one, but that's my second favorite

How'd I miss this one? And on a subject I'd often wondered about, too. Still, I'm here, now. Thank you, Hank & company, for what you do. 😊
Yogurt comes out of the fridge. Mystery solved!
There may be more steppes involved.
You have to go a bit further. It really comes from the grocery store.
😂👍🏼
You’re not wrong though 😂😂😂
😂😂
this vid came in handy when i needed help on a college lab, hope it sticks around
It's kinda amazing how many symbiotic relationships humans have cultivated with microbes without knowing.
That avatar! 🤣 🤣 🤣
I don’t know why but when I read the title, I thought it was about the great and powerful Yogurt from the movie Spaceballs. ADHD strikes again!
Narrated with such eloquence.
I've accidentally "made" yogurt on many occasions. I'm sure that's exactly how it was probably discovered, too.
It sounds plausible for Turks to introduce it to Europe. Turkic and other Eurasian Steppe peoples have a lot of such food and even drink like Ayran.
the word yogurt is a turkish word, I don't know why this is even a mystery in the first place

For some strange reason, my belly doesn't seem to tolerate youghurt very well. I get bloated and it hurts. Regular milk? Just fine and dandy

Yoghurt makes me feel sick with the flu for days afterwards :c (same with yoghurt substitutes) FML. I used to love yoghurt.
For whatever reason my brain recalled Master Yogurt from Spaceballs 😂😂😂
