Barnett and Frank Mir made grappling exciting for Heavyweights, they adopted a gameplan that was more than a simple ground and pound till you gas out then just lay there.
Catch wrestling was around before judo (Gracie Jujitsu come from judo) was introduced to the west. It developed in England and other parts of Europe. It is different from bjj in the it is way more aggressive. There are plenty if submissions in catch wrestling along with crazy throws. Older pro wrestling comes from catch and scientific wrestling. The Gracie family was always scared of pro wrestlers. Check the history on it.

All these I mentioned their grappling coaches were/are catch wrestlers. Hell Khabib is a Catch Wrestler since Sambo is basically Catch Wrestling but called Sambo, the creator of the sport was a catch wrestler. So sit down mark. Hell even Jon Jones is a catch wrestler, he’s trained grappling by Pankration coach which is a mixture of boxing and catch wrestling.

Sakuraba trained at Maurice Smiths K-boxing/submission center in late 90's Bellevue,WA USA when in town. Loved watching him roll there. He was also always on the treadmill running. Motivational beast.

Saku is the man. Also impressive how a man of Barnett's size can flow with a smaller guy so smoothly.
A skilled big man can be just as graceful. Flow rolling and technical sparring will help a big guy not rely on his crutch/strength.
He isn't ridiculously larger, Sakuraba is a rather thick man. Barnett is mostly just a few inches taller and has a bit more flab on him.
It's probably cause you're used to seeing him to with heavyweights that are just straight sloppy
