Chef, curd is supposed to tenderize mutton and chicken. But today you said that it delays the process of cooking daal due to the presence of protein. That's something I did not know. Thanks for the information. Your videos are very enriching. These nuggets of information are very valuable indeed.
Great Point Shailja, I could be explain by virtue of experience...... Many times when Mummy cooked she used to involved us / sisters who ever free at that time after study stood with mother in kitcken.... 1) Mother always asked to add any sour ingredient when 70% or almost 90% cooking done and cause behind sour slow down the cooking and it's take more time to reach at end point of cooking also need to add bit of water in-between. 2) Bt when we don't put any thing on flame, sour ingredients helps to tender item (except tamarind). And I do realized Bt I am also curious to know science behind it.
U r absolutely right Chef. Vegetarian dishes don't need onion and garlic as the veggies already have their own flavours. Being a pure vegetarian, I enjoy making every dish without onion and garlic and people around us actually are astonished to see us do that 😊 Thanks for such a wonderful recipe

Unique and tempting. Chef, which variety of masoor did you use for this recipe? In Bengali homes we generally use pink/red whole or split masoor to prepare regular daily daal. In Bengal masoor dal is also considered as a non-veg (amish), maybe because of the meatiness you described in your video. BTW, there is an item hugely popular in Kolkata, it's called 'tadka daal', it's basically a semi dry preparation of green moong mostly available at dhabas or small eateries, sometimes it is prepared with eggs or meat and goes very well with phulkas. We have this notion that it is Punjabi by origin, but when I travelled to North India, I never found this item in any of the restaurants or dhabas. If you know this item, request you to please prepare it on your show and discuss its origin if you may. It would be fun! 👍😎

If we add white chana instead of masoor dal we can make awesome chana aloo recipe with same ingredients and same method .
