- Here’s a simple recipe for Matar Stuffed Aloo Tikki:
Ingredients:
For the potato mixture:
4 large potatoes (boiled, peeled, and mashed)
2 tablespoons cornflour or breadcrumbs
1 teaspoon red chili powder
1 teaspoon chaat masala
1 teaspoon garam masala
Salt to taste
For the stuffing:
1 cup green peas (matar), boiled and mashed
1 teaspoon cumin seeds
1 green chili, finely chopped
1-inch ginger, grated
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
1 teaspoon amchur (dry mango powder) or lemon juice
1 tablespoon oil
Salt to taste
For frying:
Oil for shallow frying

Instructions:
1. Prepare the Potato Mixture:
1. In a bowl, mix mashed potatoes with cornflour, red chili powder, chaat masala, garam masala, and salt.
2. Knead into a smooth dough and set aside.
2. Make the Peas Stuffing:
1. Heat 1 tablespoon oil in a pan. Add cumin seeds and let them splutter.
2. Add green chili and ginger; sauté for a few seconds.
3. Add boiled peas, turmeric powder, red chili powder, garam masala, and salt. Cook for 2-3 minutes.
4. Stir in amchur or lemon juice. Let the mixture cool.
3. Assemble the Tikkis:
1. Take a portion of the potato dough and flatten it into a small disc.
2. Place a spoonful of the pea stuffing in the center.
3. Seal the edges and shape into a round or oval tikki. Repeat for the remaining mixture.
4. Cook the Tikkis:
1. Heat oil in a non-stick pan for shallow frying.
2. Place the tikkis on the pan and cook on medium heat until golden brown and crisp on both sides.
3. Drain on a paper towel to remove excess oil.

Serve hot with mint chutney, tamarind chutney, or yogurt. You can also garnish with chopped onions and sev for a chaat-style presentation.
