I don't understand though why she doesn't utilize the pasta water more during her cooking since she has both things going at once. Instead of salting each time she adds things to the skillet, why not use some of the water to both lessen cooking time and to caramelize the onions? And you TOTALLY didn't scrape that egg/cheese bowl! Shame! (I'd probably put an avacado on top, cuz yum) We all execute our dishes a bit diff or are trained a bit diff., and regions probably change it as well. Up here in MN I bet we like things a bit more savory/sweet as it's cold and that satisfies a certain need. We always add our greens in at the end to retain that nice crispness, but some times you want a nice wilted green as well. Oh well, to each our own, and fuck you, I'm hungry now.
for those that dont have a fully seasoned cast iron skillet or pan, dont cook anything with tomatoes or acid in them. but seeing as this is a cooking channel, i am sure that their pan is fully seasoned.

Ok I only came across “munchies” videos a couple of days ago and I got say I have binge watched them while eating peanut butter and banana fried “samiches” with “Hal Le Pin O’” on the side. I love these videos !
Why do people think adding oil to the boiling water is to stop the pasta (rice.....) sticking? An old Italian lady told me it is just to stop the water boiling over on the stove, you only need less than half a teaspoon and it works a treat. It puts a coating on the water's surface and helps keep the foaming mess at bay.

I do not use a timer for pasta. I use a timer for rice and for baking, and not for anything else. I have a clock RIGHT ON MY STOVE, right in front of me, and I can watch the time. Besides, I tend to prefer my pasta to be cooked a little more tender than the package recommends, so I usually cook it for about 10% longer than recommended unless I'll be cooking it more later, like in a baked pasta dish. You should cook pasta so it turns out the way you like it, and you should never let anyone dictate to you that you're overcooking it or undercooking it if you're happy with the result. If you like how your food tastes, you're probably doing something right. By the way, pasta thrown at the wall is pasta you don't get to eat. I have always believed the best way to determine if pasta is properly done is to eat a piece of it.
A quick Google search shows that bacon fat has a 325F smoke point and olive oil at its worst is 375F if you use extra virgin, but even higher for other qualities. She chose correct.
