    TRANSCRIPT:
    So here we have our whiting. This fish is in the cod family. It's a very sweet, white-fleshed fish. It was very popular years ago, here in our sea port of Gloucester, Massachusetts.
    I want to show you how you would clean this fish. So the first step that you would do is, you would rinse them off in the sink. And you're just going to cut. There's like a gill here. You would cut the head off at an angle, just like this.
    In here would be the body, all the guts. You just remove that with your finger. You're going to place the fish down. And holding the tail firmly and with the knife, you're going to start at the end. And you're just going to scrape along the skin.
    Now, you would think that you're going to tear the skin. It's amazing. You really don't.
    The scales just pop right off. And you're just going to keep going down the fish like this, until they're all removed. You're going to rotate the fish, going all the way around.
    Here we have some bones. We leave these on. It makes it easier when you're eating them. Believe it or not.
    Once they're clean, you're going to give them another rinse and dry them. So now that we have our fish all cleaned, I'm going to show you how to prepare Fried Merluzzi.
    So here we have about two cups of flour. So we're going to put about two teaspoons of kosher salt into the flour and some fresh ground pepper. I'm going to say about a teaspoon. I'm just going to give it a little swirl around.
    Now, here I have whole milk. So we're putting the fish into the milk bath and then right into the seasoned flour, just going to give it a little shake. I'm going to set this one aside. We want to put them all into the oil at the same time.
    Now, you can see our oil is bubbling. We're ready. We're going to add our fish.
    You can see that, on the edges here, it's starting to get a little golden brown. They're going to cook about two to three minutes on each side, depending on the size of your fish too. Sometimes these come a little bit smaller. And they do come a little larger. But over all, they are a smaller fish.
    We're just going to turn them over. Oh, these look so good. Growing up, my dad would bring buckets of these home. And we always knew what we were going to have for dinner.
    So here our whiting is all cooked. We're going to remove it. I have here just a glass Pyrex pie dish, lined with a paper towel. We just put it over here.
    Oh, wait until you taste this. I tell you this brings back great memories. At this point, what we're going to do is, we're going to use a little kosher salt. And while it's warm in the key. Just give it a little sprinkle, flip the fish. And we're going to give it another little sprinkle. And here is your Fried Merluzzi.

    I tried substituting lemon pepper for regular pepper and it still tasted amazing. Even whipped up some chilli oil. Thanks chef!

    I do narduzzi often more health version although fried rocks to
    In large skillet
    Bit water ,sea salt , ground black pepper , bit red dry chilli peppers ,1 tomato chopped , little olive oil, 1 scallion fine chop 3 cloves garlic fine sliced,, nice handful chopped flat leaf italian parsley,,,,bring all ingredients to a light boil taste, make adjustments if needed ,now and in cleaned no head whiting tummy down lower heat cover let poach 2 min .....enjoy

    Pouched w/garlic,parsley,olive oil,blk pepper,slices of lemon or you like sweet use orange,or use very small amount of very thin potatoes.cover for 10 to15 minutes and you have a meal.

    i take the bone out of my fish.? Before cooking it.? Makes it easier to eat.? And I don't have to worry about picking out any bones in the bites.?

    I was wondering what this fish looked like. I just noticed that it was mixed with pollock for the artificial crab I bought. It being sweet definitely makes sense for artificial crab. It looks great fried. Great video,thanks

      Buchi Ashiedu you can buy filets at the grocery store. To get it fresh you will have to either catch them fresh or get them at a local fish market. Fresh fish is always better.

      Because the bitch didn't clean it properly. If she did there'd be no bones and you could just pick it up and eat the whole thing. Stupidly done. If you're gonna deep fry a fish DEBONE IT! if you want to eat it off the bones then just grill it.

      Add more seasoning if your eating carp. Some ppl like to taste the food they cooked.

    Is there a substitute I can use in place of the milk?

      I've used an unsweetened almond milk wash and dipped the fish in flower cornmeal and seasoning, and came out good. You can also try a mixture of eggs and almond milk or just plain water works fine.
      The best thing about whiting besides the taste is that it is pretty much the cheapest fish at the supermarket. I pay about 2 dollars a pound. So you can experiment without putting a dent in your wallet.

    A fillet knife would do a better faster job on the fish than a chefs knife. Really do not need that much oil for frying them. if you use a good non stick frying pan to do them into.

      Why are you surprised? Don't cook much? It's pretty standard. Some people use a beaten egg instead of milk.

    She doesn't say what kinda oil, what temp to fry it at, when to know when the fish is done. It doesn't even look done. Very uninformative video. I will not use this...
