Kirito vs PoH is one of my favorite battles in anime history. PoH knows just where to hit Kirito and that's what makes him a great villain. He knows Kirito's weakness and doesn't hesitate to exploit it. PoH has nothing to lose while Kirito has everything on the line. His friends, his life, and Asuna can all be taken away in an instant but he still fights on.
Precisely. I also recall someone saying they don't understand why Asuna cried when Kirito put on his old outfit. But that's simply because she knows him the best and she understood he finally isn't running from his inner demons now. He's facing the biggest threat he never got the chance to beat in SAO, one that traumatised him bad. Yet he stood up for it. It's amazing symbolism if you ask me. But yeah, PoH is litteraly the definition of a true villain, because you're right he always strikes at weak points no matter where they are only to make his opponents suffer. He doesn't even want their death for a bit most of the time if he finds them interesting.

He was threatening Kirito to go back to murdering everyone around only to enrage him and make sure he suffers after ; he plays with people's emotions easily, which is what Kirito meant when he mentionned how he did them back in SAO. He was respectful towards Kirito's strength indeed, you aren't wrong on that point, but he was also determined to strike weak points of the protagonists as it's his way of fighting.
