The tabs without writing aren't because they change thread - it's because the red tab itself is trademarked and (I believe) they need to satisfy some requirement to maintain it..
It's not always necessary that it'll always be written "Levi's" in small letters at the back in the red tab. Sometimes it is also all written in capital letters like "LEVI'S".
I called Levis because I had a pair with the upper case E on the red tab. Their customer service guy said that the upper case E can happen depending on the model, and it was not an indication of fake Levis. What am I missing here? Am I wrong? Are they wrong?

The big E fact is wrong. I contacted the Levi's and they stated that it depends on the designer. They still produce jeans with the big E.
