Hi Kristen, I highly appreciate your dedication towards a creative tart. I've been baking patisseries for a while now but I'm new to tarts. I have a question regarding tart base shrinkage. The recipe and procedure you used in this video were copied 100% but when I baked the base after removing the rice it shrank by half-inch whereas yours was attached to the corners. Is there any hack for it? Because by filling the base with rice, the base from the middle stays a little raw and the taste differentiates as well.

I just wonder what is the best whipping cream brand I can find in Australia? I tried out some brands in Woolies. My best find until now is Bulla’s thickened cream but it still has some gummy/ gelatiny taste. I want to find one without additives.

Nice tart, Chef. Personally, I'm not big on Caramel; the earthy-notes are delicious but it's just too sweet for my taste. I prefer subbing the Almonds with Hazelnuts and the Caramel Mousse/Glaze with Espresso. Pink Peppercorn makes a nice addition to the crust to pop the citrus notes a touch more since the espresso is pretty strong and hits an acidic note too.
This is awesome and sounds amazing to eat. I’m definitely going to try this out.

This is the most informative cooking video I have ever watched. The video has explained a lot of where I was going wrong with Pastry and I now feel very knowledgeable. Will definitely be signing up for the online courses. One problem, it is not clear how long do you bake the pastry for? What is the first baking initial time? Many thanks :)

Kirsten, I love videos. I worked with chocolates and confection years ago, before Silpats. My question, is there a big difference, in your experience, with the brand name of Silpats?

What if you don't have an induction stove?
It looks great. But very time consuming. I like to bake but I have a two year old so at this time it's hard to get in the kitchen and have time to focus. Love it though
It's not for the time poor! however I have lots of easier tarts on www.savourschool.com.au/online-classes/ if you love baking. I recommend my raspberry coconut tart, of I have a chocolate tart that has 2 components and has been a crowd favourite :)
