Love this recipe! Wrote it up for people who want to reference it when they cook it over and over again like me :D
    2 yellow onion, roughly chopped
    3 tomatoes, roughly chopped
    2-3 tbsp oil
    1.5 tsp whole cummin
    600 g (?) potatoes, 1 cm cubes
    1 big chunk ginger
    3 cloves garlic
    1 tsp salt
    1 tsp tumeric
    0.5 tsp chili powder
    1 tsp garam masala
    200 g spinach
    1.5 tbsp cream
    Fry whole cummin until fragrant.
    Fry onion until golden.
Add ginger and garlic and fry for a minute or two.
Add tomatoes, cover and let cook for 10 minutes, medium heat.
    Oh yum! Smells so good!
Add spices, cook on high heat for a minute.
Add 200 ml water, mix. Add potatoes, mix.
Cover, cook for 10 min on medium heat.
Chop up spinach a bit. Add, then cover and cook for 7-8 minutes.
    Drizzle in cream and mix.

      Hari
Well, the original art of cooking in India was the art of spicing without being dependent on onion, an art which is still alive in many places in India as well as correlated places in the west, f ex the chain of "Govindas" restaurants all over the world.

I love onions in most savory dishes. Most of the Chinese restaurants used to use onions in their food, which seems necessary to me. Now they want to charge extra for onions, just because some people don’t like them. The people who don’t like them should just have to request no onions. There are many more people who want onions in their food then don’t.

Far out this is a seriously good dish! I'd tried a few of the Saag Aloo recipes available online and been disappointed so far. The first time I made this it exploded with flavour! I added one bird's eye chilli with the garlic and ginger (because I had one at home anyway), rounded up to a teaspoon of chilli powder, a bit more spinach and coconut cream instead of cream. It had some kick, I'd say medium-hot. Thank you Chetna!

Great recipe Chetna! I make it pretty much the same, though I add mustard seeds in with the cumin. Always a great way of making a meatless curry that satisfies the kids too. The green of swiss chard also works great here if you don't have spinach.

Heaven, just heavenly. I like smooth sauces to I put it in the blender after the water, but before the potatoes. Came out absolutely velvety. I also added a tin of chickpeas with the spinach. This came together so fast and is just delicious. I added chicken the second day--it is SO versatile. This jumps out and yells comfort food. Fun to make and wonderful to eat. Thank you Chetna.
