With inflation going on we need to really make sure we are eating and cooking what we buy and being smart on how we are shopping. The go to meal for my family and very budget friendly is chicken flautas. All you need is corn, tortillas, chicken, mozzarella cheese for the filling an avocado and some sour cream. 😊

Hello Kimberly, I really enjoy your planner and this style of meal planning. One of my favorite meals is baked or grilled chicken wings, salad, and one of those bisquick biscuit packs.( you can get the biscuit mix from the dollar tree). I always cook enough for leftovers. Another meal is ground turkey tacos, beans, and rice. I cook enough of this meal for leftovers too.
We recently discovered the soup dumplings too! They are delicious! We add them to chicken broth and udon noodles and desired veggies. There you go a nice warming soup for winter time.

Breakfast for dinner is an economical favourite in our house. One we do often is Spanish tortilla (egg, potato and onion pancake) served with biscuits and fruit salad.

Oh trust me we want to move back to Arizona we love it there. But my husband got a promotion that took us back to California
Bolognese for a dinner idea..there is a chicken shortage bc of a bird flu that came through causing a wipeout of millions of chickens

There was an avian flu that wiped out chickens...so its just waiting for new cluckers to age up and produce

So good to see you! I felt like we were stuck in a rut, but this week I've added sweet and sour chicken with cream cheese wonton and smash burgers. Always a hit in our house.

I know, this inflation is nuts. My electric bill almost doubled. I’ve cut back on driving for pleasure. Not much left to cut anymore. All you can do is laugh. We will get through it and come out stronger on the far side.

We buy carne asada in bulk and just will have tacos if we are stuck. But this week I used it for Philly cheese steak with peppers and mushrooms over French bread it was so good.

I like to buy salsa from my favorite restaurant. Throw it in the slow cooker with chicken breast. Have it for enchiladas, rice bowls, tacos, whatever!

Our go-to is Mexican shredded chicken in the crock pot. 4 breast makes about two dinners and a lunch for hubby and me.
You can have tacos, Chalupa‘s, chicken pasta.

Happy New Year!!! We love the TJ’s Orange Chicken but we moved a year ago and are now an hour from the nearest TJ’s. I am happy that we at least have Aldi and Costco near us. This week we are having Costco Broccoli Cheese Soup, Tacos, Crockpot Chili, Crockpot Tortilla Soup (using leftover fajitas from freezer), Pork Chops (purchased for New Years but didn’t make). Stuffed Shells (frozen from Aldi with jar sauce and mozzarella Cheese on top). I hope this gives someone an idea for their own menu plan. Egg prices have been going up for a long time. I have only been buying eggs at Costco when they have them since they have had the best price by far. I am so glad you are doing well and are posting videos again. Looking forward to the next one.

Inflation is insane. We have steaks a few times a week but it's an easy meal for us and I have to eat a lot of iron rich food as I have a hereditary blood condition which means I don't process iron well (and am always low in iron). For our cheap freezer meals we make shepherds pie with mince, veggies and mashed potatoes. It's interesting to see what other meals are made in other countries, have no idea what some of the meals you mentioned are but will google them to find out!

How's were you guys the flooding is bad in California probably not near you . We like pork chops mashed potatoes and green beans with garlic bread as one of are meal we like to make . We been doing some budgeting on how much we spend on everything and one is groceries . Have a great day 😊💞

Veggie stir fry with all the veggies your family likes and eats. Rice or any kind of noddles you have on hand even leftover rice which is great. You season with salt, pepper, fresh garlic, onions, soy sauce and some honey or a little pineapple or apple juice for sweetness. You could also use frozen veggies to cut down on cost

I love Trader Joe's Orange Chicken! I really enjoy the Vegetable Fried Rice from the freezer section too! I heard there is an egg shortage because of a bird flu...don't know if that is correct. We make hot dishes here a lot in the winter. My husbands favorite is Vegetable and Hamburger hot dish! Thanks for sharing your groceries! Have a great day!

Those were some great Trader Joe and Aldi finds. I see Boba all over the place but still don't know exactly what it is. And those frozen packets of ginger and garlic look so convenient. I had no idea they existed.

I love doing homemade pizzas. Easy with the garlic Naan flat bread too! A liittle chicken breast chopped and pesto instead of pizza sauce, tomatoes and cheese is 🔥

What you need is TatorTots.Sour Cream.Cheddar Cheese.Bacon Bits.Cheddar Soup..it’s a pretty easy meal to make I have it memorized to a T.

The egg shortage is due to a great amount of them having the Bird flu. The farmers have to wait for the next batch of chickens to grow and produce eggs.

We are re-visiting Meatless Monday. Pretty excited to try new dishes. One dish we love is Lentils soup with Quesadillas. Inexpensive, filling, and great for cold days.
My husband likes lentils. I cook up onion, tomato in the pan with a little oil and put chicken bullion in it. Then put that with the lentils with cilantro. That’s how he likes it.

Try adding Sazón Goya (Orange) box. It adds wonderful flavor and color to broth.
