Volcanic peppers has a websight u can snag it for like $5 otherwise normal ponzu would work you can grab it in most Asian Isles. You could do soy sauce but it’s much better with ponzu

I have been in the BBQ family for over 50 years... and have ALWAYS used Real Wood... that is why I want to do Smoked Beef Jerky... I can't believe how expensive Smokers are... @judichristopher4604 honestly this recipe is fantastic. Give it a try. The only thing I’ll warn you. It’s not counter safe. You’ll wanna keep it in the refrigerator. Otherwise you can add a little bit of Prague powder. Thanks for watching I appreciate the support ❤️
NO... I have in the Restaurant Business for over 50 years... and Never Wear Gloves...because... People THINK... OH... I am wearing gloves so they're Clean... then they Touch the Meat... (do not wash their hands)... Then they touch this and that... getting their gloves dirty... and because those Black Gloves are very expensive... they do NOT change them out... and it is very well known that People that wear gloves can spread germs more... because they THINK they're clean because they wear gloves... ONCE and for some time... I WASH my Hands at least 15 Times a Day... I would have to change the very Expensive Gloves 15 times a day... WASH YOUR HANDS... a lot... you won't need gloves.
I totally agree on the 1/8th of an Inch... instead of the thicker 1/4th...
that is hard on the teeth ... and the thicker it is the tougher it is..

@onemishelle this one because there’s no pink curing salt or additives in it needs to be kept in the refrigerator. It lasts about a week.
