I made zucchini "applesauce" recently. I added citric acid and sugar. That seemed to give it a more granny Smith like flavor! I also spread it on sheets and dehydrated as fruit leather. Kids loved it!
I’d put it threw the screen and get those seeds out and add some apple juice to thin out. Try grilling a pork chop, slather the chop with that and top with some toasted pecans . Delicious!
My gosh Rachel, how about zapple pancakes? Miss Darcy on Purposeful Panty does a dehydrated zucchini bread in slices for biscoti, and cubed for croutons. You are STILL the queen of zucchini!
Every week I make muffins for my husband and I to have during the week as a sweet treat. I always use zucchini, carrots and applesauce and bananas in them to avoid oils and eggs so I thinks this would be perfect for that!!!
I always put Red Hot Cinnamon candy in my apple sauce, makes it pink and love the cinnamon flavor. Love it that you called the burner an eye, the first time I told my husband to turn off the eye, he sat there looking at me like I was speaking a different language. lol That is what my Grandmother call the burner and eye.
If I were making this recipe I too would have left the peel on, that’s where all the nutrients are stored. I would also make apple sauce cake and it would also be good with bacon or roast pork. Yummmmm. Good job Rachel and great use of an abundant harvest.

from Australia -- with the big zucchini cut in half , deseed , mix up cottage pie meat and vegie mix ( i have seen u cook this ) place the zucchini on a baking tray- put the cooked pie mix in the grove were the seeds where -- cover with tasty cheese slow bake 200 c till the zucchini is cooked and cheese browned -- best meal ever :) good luck and enjoy
Applesauce is used a lot in vegan baking, I bet this would work the same way! My zuchinnis were a bust this year but filing this away in the noggin for next year. My mother in law used to make a Mock apple pie with zucchini. It was soooo good, you'd never know the difference. That filling might be something you could can . LOVE your videos! I grew up in Michigan, just south of Flint. I'm in Cincinnati now but dream of getting back to Pure Michigan!!
LOVE this idea! Last year was my first canning year, and I searched for ideas for vegetable applesauce all over. I ended up just making applesauce with carrots, but this year I'm absolutely adding zucchini and squash for my son! :)
Rachel, I'm up for this experiment! We lost 90% of our apple blossoms this spring, so I'm really short on apples this year. I did, however get a really nice amount of rampucante zuchini/squash, as they are squash vine borer resistant. What a terrible pest to have to fight! Giant Zombie Zucchini use to go with us to the range as they make "interesting" targets. We've learned to make them into "green powder" so we keep every one of them. Now that you've shown us how to make Zucchini apple pie filling and apple sauce, we'll need to enlarge the garden space to grown even more. THANKS!
Try soaking zucchini in salt the day before rinsing and roasting in apple juice to cook down, then process to consistency, and season. This would be awesome in homemade brownies,

I know she did it with pears as well and it was yummy! My mom always had ours with pork but I would plop some in a bowl or mix in with oatmeal.
I haven't made the applesauce yet but what a wonderful idea. I have made the mock apple filling but I used apple juice concentrate so I could control the liquid and increase the apple flavor. God bless.

i love making it up stuff,,,,,,,i have some concentrate i made from our apple cider,,,,,and lots of the ice chips from it also, and this looks like the recipe i will try also,,,zucchini and applesauce both get water bathed, so yea,,,,,looks great, i bet that would make some awesome cookies, or breads,,,,,thanks so much for the ideas,,,,
Made your relish very good had it last night, have the zucchini apple sauce in the canner now only got 6 pints saved the juice filled three pints added the lemon juice and cinnamon nutmeg to it and canning as well. That would be good on a sick day heated as tea. Had my roaster to the top so added extra half bottle of apple juice will see how it takes very thick took the juice out didn't want it to be runny, 🤞
Thank you for this great idea. I didn’t grow zucchini because of the squash bugs and borers. Instead, I grew luffa which I love using while still green. Today I made luffa applesauce for my grandson! Tastes great. Thank you again for this great idea.
My two year old LOVES applesauce. It is a snack I never feel bad about giving him since he eats a no sugar added sauce, but he eats it two or three times daily. I am definitely going to try zucchini applesauce because that would a huge win for veggie intake. Thanks Rachel!

I "just" watched Acre Homestead.... say she dehydrates shredded zucchini and powders it... to add as a thickener to tomato sauces... etc. Thought of That 1870's Homestead with your tomato powder. What a great way to keep your harvest shelf ready to add to other recipes. I would have never thought about zucchini powder?
Oh boy that looks and I bet smells delicious. Our mushroom block came last week and I put it in the closet for it's waiting time. Tomorrow is the day to get it out and hopefully will be successful in growing mushrooms. Oh yum!
For large zukes I typically make zucchini gummies or I will steam, blend and freeze to use in a cream of fresh vegetable soup I make. I also save one large one for seed. Looking forward to trying your new invention Rachel :)

I just used my last Zucchini and it made me decide to check your Zucchini play list. I was surprised to see you didn't have a Mock Apple Zucchini Pie. That was what I tried and it was wonderful. I used a recipe I found on the internet. Also didn't see a recipe for Ratatouile. i used a recipe I saw on the Today show. It includes eggplant, onions, tomato and zucchine as well some other garden goodies. I found a recipe on line to can it. It makes a great side and a wonderful lasagna, recipe also on the Today show. I dehydrate zucchini to throw into veggie soup in the winter.
Try Vermont Boiled Cider from King Arthur. I've used it with zucchini to make apple flavored zucchini bread and it works great for that. You have to get very creative when zucchini is coming out your ears and neighbors will no longer open their doors for you. Thanks for sharing!

I use zucchini and cucumbers in my homemade dog food. Once they are cooked my dog eats em up. Basic 1 day of fog food recipe for 30-50lb dog: 4oz meat (including organs too) 8oz veggies (some orange, some leafy greens, some misc), 8oz cooked carbs (rice, oats, pasta), 1/2oz fat (coconut, bacon, lard, tallow). My old girl loves it and looks like she's gained a little weight since starting 2 months ago, and much cheaper than store bought 😉
So it's apple flavored zucchini sauce. It's a good idea for preserving zucchini for baking various sweets, or to use as a sauce accompaniment to savory foods. I don't think you have to convince anyone it's apple sauce. I might add ginger and cloves to get more of that wintery spice thing going - speaking of which, why not add it to pumpkin puree and make a pumpkin/zucchini pie? Endless possibilities!
Fresh Vegetable Medley: 1 bunch broccoli, 1 small head cauliflower 2 medium zucchini 3 tbsp butter 1/2 tsp garlic salt 1/4 thyme 2 medium tomatoes, cut into wedges 1/2 cup grated cheddar cheese Microwave cooking time: 10-12 minutes. Power level:high. Trim broccoli & cut into 1 1/2 inch pieces. Arrange on glass plate in a circle, flowered ends towards the center. Trim cauliflower & cut into 1 1/2 inch pieces. Arrange flowered ends towards the center, between broccoli stalks. Alice zucchini &place in center, cover. Microwave 8-10 minutes until tender. Combine butter, garlic salt & thyme in glass measure. Microwave 1 minute until melted. Drain excess liquid from vegetables. Arrange tomato wedges between vegetables. Drizzle with butter. Sprinkle with grated cheese. Microwave uncovered 1-2 minutes until cheese melts. Serve at once. Vegetables should be of even thickness for oven cooking. Add 1 tbsp. if liquid to vegetables if necessary. Vegetables may be refrigerated & reheated on same dish. Serves 6-8. Recipe from Bringing it all together with Pearl McGonigal(Safeway book)
I want to try this I just have a general question though, when wb canning does everything get finger tight closed or should the jars be tightly closed I'm so use to the inversion canning wb is confusing to me . Rachel have you ever tried watermelon rind pickles? They are so good and they stay crunchy! I made them recently using the one brine for everything recipe you shared.
I think I would have used frozen apple juice concentrate. more apple flavor and the sugar is already in there. I plan to try this using some homemade pectin I made a couple years ago out of boiled apple peels would sweeten without sugar and is already thicker. Thanks for giving me an idea spring board!!
Pam says- If you get a great eggplant year, you could do the same thing with them. My mom's mom used to make eggplant pancakes like they make in the French Quarter. I think they use her recipe.

Make an applesauce cake, or a fruit and granola bar for travel, camping or hiking. Use it with oatmeal, or make apple zucchini butter. Use it on pancakes or waffles. Make a fruit dip to serve guests. Use it on your pork or lamb? Yum!

I've been adding zucchini to my apple sauce and pies for years...I also use thin slices for the middle layers of my lasagna. No one ever knew.
That would make some great apple bread, Apple spice muffins or just regular apple cakes!! I love that it is rustic!!

Same here. Hardly any apples but a boat load of rampucante zucchino. This makes me very happy to have an alternative

I might add ginger and cloves to get more of that wintery spice thing going - speaking of which, why not add it to pumpkin puree and make a pumpkin/zucchini pie? Endless possibilities!
Fresh Vegetable Medley:
1 bunch broccoli,
1 small head cauliflower
2 medium zucchini
3 tbsp butter
1/2 tsp garlic salt
1/4 thyme
2 medium tomatoes, cut into wedges
1/2 cup grated cheddar cheese
Microwave cooking time:
10-12 minutes. Power level:high.
Trim broccoli & cut into 1 1/2 inch pieces. Arrange on glass plate in a circle, flowered ends towards the center. Trim cauliflower & cut into 1 1/2 inch pieces. Arrange flowered ends towards the center, between broccoli stalks.
Alice zucchini &place in center, cover.
Microwave 8-10 minutes until tender. Combine butter, garlic salt & thyme in glass measure.
Microwave 1 minute until melted.
Drain excess liquid from vegetables.
Arrange tomato wedges between vegetables.
Drizzle with butter.
Sprinkle with grated cheese.
Microwave uncovered 1-2 minutes until cheese melts.
Serve at once.
Vegetables should be of even thickness for oven cooking.
Add 1 tbsp. if liquid to vegetables if necessary.
Vegetables may be refrigerated & reheated on same dish.
Serves 6-8.

I want to try this I just have a general question though, when wb canning does everything get finger tight closed or should the jars be tightly closed I'm so use to the inversion canning wb is confusing to me . Throw your tomatoes in a bag in the freezer. You can even score the bottom so the peels slip off while thawing.
I like the peel on it and it would me much more nutritious! Maybe use it in baking muffins?

Rachel have you ever tried watermelon rind pickles? They are so good and they stay crunchy! I made them recently using the one brine for everything recipe you shared.
I think I would have used frozen apple juice concentrate. more apple flavor and the sugar is already in there. I plan to try this using some homemade pectin I made a couple years ago out of boiled apple peels would sweeten without sugar and is already thicker. Thanks for giving me an idea spring board!!
Pam says- If you get a great eggplant year, you could do the same thing with them. My mom's mom used to make eggplant pancakes like they make in the French Quarter. I think they use her recipe.

Make an applesauce cake, or a fruit and granola bar for travel, camping or hiking. Use it with oatmeal, or make apple zucchini butter. Use it on pancakes or waffles. Make a fruit dip to serve guests. Use it on your pork or lamb? Yum!
