Kanye West so basically if you flip the burger a lot during cooking, the outer parts of the inside retain a perfect color. If you don’t flip, there will be gray borders when you slice the patty. Also, flipping it ensures that the burger won’t dry out, giving you an extremely juicy patty.

Place ground meat in colander with a little white vinegar and a few drops of lime
Put strainer in larger bowl fill with cold water , soak a few minutes,drain off water(press gently on meat to push water out) ,repeat wash rinse step till water is clear

Im from trinidad and we usually don't clean ground beef but if you really want to, you could blanch it for a few minutes in some hot water

The way i grew up we clean ground beef by letting it soak in water with white vinegar for 10-15 min, then when it's soaked we throw out the water and season our meat ;)
