Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I gotta say this cause it is true. Mr. Soo has a video that shows how to cook a perfect steak. My result after trying his method has been a really big turn around!
Before I watch his video, I was a very bad steak cook. It always turned out dry and texture was the same as shoe leather, "no joke, it was terrible!" . After watching the video, No matter if I am cooking steak on the stove and oven or on the grill, it always comes out tender, Juicy and full of flavor!
I bet If Mr. Soo was given a leather shoe soul he can make it come out tasting good and tender.

Hello have a perhaps silly question. What cooker gives you the best results? Offset, reverse flow,wsm, pellet, even size of the smoker? Basically if you were to buy a smoker and you were to nail it, what should you use?
Everything in BBQ is a 3-hour argument and Jerry Springer fist fight. It's always the Pitmaster and Never the Pit. It's like when someone asks you which is the best car to buy. Well, it depends! :-0

I have a $30 cheap bbq from Lowe’s, ceramic smoker, pallet smoker and this offset. I still use all three. It all depends on the needs and your level of time commitment. When I feel lazy and am cooking one item I’ll throw it in the pellet. When I have to cook 10 briskets, I’ll use the offset. It is fun playing with the offset and learning about fire. But it’s a whole day commitment. I think Harry has a video about bbq comparisons.
@@winnieyee6483 I’ve heard somewhere that you can’t beat the taste from a 500 gallon offset. Just wondering if there was any truth to that? Thinking about buying a reverse flow didn’t want to leave myself short. Thanks for the advice 👍

I’m in the restaurant biz. I own a couple of restaurants that were shut down due to the pandemic. Had too much time on my hands and decided to start a bbq biz. My equipments are commercial grade and costly. But they are business expenses.

Chef’s Toys and Webstaurant.com. Try eBay. Look for Alto Shaam or Cres-cor brands. Make sure they are insulated. These are known as “cook and hold” ovens.
Hey Harry, You mentioned the biohazard with the raw beef but isnt that what the beef tallow is that you put on the paper? Do you cook the tallow?
How do you think they transform raw beef fat into beef tallow? The clue is in the process🤷🏻🤷🏻🤷🏻
You need to heat beef fat to 300F to render it to beef oil. So the tallow is sterile. Give it a go!
It would have been a good comparison to $/lb to also mention trim waste.
Don't buy briskets now as they went up 150%.

Harry I so wish we could buy prime brisket for $2.99 per pound here in Australia. I would be cooking it every weekend. We get Black Angus grain feed from the local Costco here in Australia at $14.00 per Kg. That converts from Kgs to Pounds then AUS to US dollars at $4.90us per pound….at that price Brisket is a special occasion only…very jealous of Mr Beans.

@@SlapYoDaddyBBQ true that, it just how I learned. I also chill down in freezer after resting wrapped in cooler. Firm not frozen then slice while it cold, cooling makes it reabsorb the juices. Comes out perfect every time for me. Slices better as well…give it a try one day. When serving, Heat slices at a time or the entire bundle n foil and oven👍🏼
