    What I like about sinigang is that the dish can be made into different varieties by just changing the protein and/or the souring agent. This lends the dish a versatility that will ensure you will find your fave version of sinigang

    I remember my mom would use fresh tamarind soaked in boiling water, then crushed to get all the tamarind juice out. Or you can also use juice from fresh calamansi, just make sure to remove the seeds as you squeeze/strain the juice.
    But these days with life being busy I just use sinigang mix too. Then I use instant pot to pressure cook the pork with the sinigang mix to soften faster. I just add the vegetables later after the pressure cooking is done and let it boil once. Ready to serve! My hubby always likes to dip the meat later in some fish sauce.
    But if one is not busy, stove top cooking is just fine.
    My vegetables there would be eggplant, radish, string beans,
    taro, yellow or green pepper, water spinach, but usually cannot find it here in our area so bokchoy is okay.
    Love to have sinigang during cold weather/winter period! Yummy!
    Next to sinigang, adobo is my favorite as well . Hope you can cook that too!

    Sol and Luna, experience Filipino time firsthand. If you don't give yourself a few hour's leeway except to arrive in Filipino time.
    Discovered what sigarilyas (winged beans) 8 years ago. It's one of my favorite vegetable not knowing the name of it since childhood until we moved to Okinawa Japan and recognize it there. I highly recommend you guys trying it, especially the dish that has coconut in it. What I missed in eating the real sinigang is an actual real tamarind sinigang. Since they first invented the instant powder form I hardly eat the real version because it's more convenient for people, especially for mothers.

Filipinos from different province or island have their different added ingredient that makes their Sinigang a different variation from others.     there are different techniques in making sinigang every household has its own recipe..in tagalog way mostly they prefer lots of tomato but in visayas or mindanao not too much..some also use taro to make the soup little creamier..thanks for ate's good hospitality youve tasted the filipino sour soup sinigang

    Back into your country if you wanted to try to cook it again any vegetables that is watery can be included in that kind of soup, if you don’t have the kangkong or the water spinach, plain spinach can be added the way we used to when i was in japan

    Sigarilyas is winged beans in english, From Spanish seguidillas‎, plural of seguidilla. Pronunciation. Hyphenation: tl|si|ga|ril|yas. Noun. sigarilyas, or you can used habichuelas

    Different regions in the Philippines differs what the place or mix in their "sinigang". In the Ilocos region, different veggies and root crops are mixed to either pork, fish or shrimps. The "pinakbet" also were cooked differently in each regions or provinces. Mostly, the Ilocanos cook ( pinakbet) mostly vegetables like okra, long beans, eggplant, ampalaya(bittergourd), etc., depends on the availability of vegetables.

    You should visit Sulyap gallery and bed & breakfast at San Pablo City, Laguna. They serve Laguna style sinigang there. Also, the restaurant and the hotel are traditional Filipino houses they have converted to a hotel and restaurant.

    May favorite sinigang is the shrimp one. So glad that you liked it. Some foreigners don't like sinigang at first taste because it's too sour for them, bit after a while they became used to it

    You can use fish like salmon, tuna or tilapia instead of pork. Perhaps fresh lemon can substitute tamarind for sourness.

    I'm so happy for you girls You know I learnt a lot after cooking Sinigang the first time, it's fairly easy to make but you have to have the Sinigang Mix though xD also apparently if you say 'it tastes sour' to white people, they think it's like the sour candy stuff so they're put off LOL my fiance had to explain that's not how it tastes like 🤣 I've also taught my fiance how to use the spoon more, coz the rest of the world uses a knife and a fork for everything (and spoon only for soup) but Philippines is a little special hahaha but now whenever we eat anything that has rice, he eats with a spoon
    I hope you girls get to try more foods!! It'll really fill your tummies!

Also I wanna teach you one important thing about our eating culture, when you are having a meal and there are people who aren't, it is customary to say "Kain tayo" or Let's eat in english as a way of being polite. You may not practice this but I'm sure people will definitely appreciate it 😊

    Next time try Filipino Caldereta it is slightly different from your caldereta back in your country. Filipinos add cheese and canned liver spread instead of raw liver you guys used to it back in Latin-America. And also there are no olives on it.

    the famous among the sinigang version is the pork sinigang in tamarind with gabi. maybe someday you can try other version of sinigang. It could be either pork, shrimp or milkfish, like sinigang sa bayabas, sinigang sa miso, sinigang sa santol, sinigang sa mangga (hilaw).
    back in the day, we use the real tamarind, but now most of them are now using the powdered mix.

    Sigarilyas is winged bean, and kangkong is water spinach. You can also put some sting beans in Sinigang.
