Sauteing garlic or Aliums generally allows some distinct depth of flavour to ease into the dish, and helps the aroma peak. Keep an eye on it though, so it doesn't burn. Saute on low heat for 30 sec, 1-minute max, or put your onions first then garlic since onion has more moisture.
