The cashew cream is a 1:3 ratio of cashews to water. You can use less water for thicker cream as well. I have informed my publisher about issues with the digital version, and at this point, I believe they have pulled it from Amazon until it can be corrected. You can use any plain, unsweetened non-dairy yogurt (I use soy) for the recipes in the book. I am sorry about the problems with the digital version, but unfortunately, I don't have anything to do with the actual publishing of it.
Do you have a half and half recipe I can enjoy in my espressos? they are all too sweet or thin and bland recipes I've tried already. Need thick n creamy. Maybe an Oat Cashew would be creamy and thick? Actualy I've got your Vegan Pantry , will look in.

since I'm allergic to cashews as well I make mine out of pureed cauliflower with the perfect consistency and throw in plenty of garlic for flavor and nutritional yeast of course

@miyokoskitchen I think I`ll try some broccoli - green peppers with jalapenos tonight, maybe even a few diced baby carrots, for a splash of color. The fridge is bare but it`s amazing what we can create with only a few items. Bravo once again.

Already made the ice cream today a chocolate, a raspberry. wanted to make a mango and a peaches but ran out of frozen bananas, they were on the grocery list Lol ! If you use a high speed blender, the cashews should be completely smooth with no bits in it. If you don't have a high speed blender, soak your cashews in water for 6 - 8 hours, drain, then use in the recipe. The soaking will soften the nuts and make them easier to puree. Your cashew cream should come out pretty smooth.
