  • The ultimate summer dish
    5-6 Aubergines (sliced 1 cm thick)
    7-8 Potatoes (peeled and sliced 1 cm thick)
    Olive oil for frying (500-750ml)
    For the Mince Sauce: 1 kg mince beef, 50ml olive oil, 3 medium onions (chopped), 1 Leek (chopped), 3 cloves crushed garlic, Small glass of red wine, 1 Tablespoon tomato paste, 250 gr tomato pasata (tomato puree), 500 gr chopped tomatoes, 1 glass of water (200ml),
    Handful of Mint and Handful of parsley chopped including stock
    Salt (2 teaspoons), Pepper (1.5 teaspoons), Paprika (1 teaspoon), 2 Bay leafs, 8 All spice, 1 Cinnamon stick, ½ teaspoon nutmeg, 2 teaspoons sugar, 2 teaspoons oregano, 100 gr feta
    For the Bechamel: 1 ltr milk (warm), 90 gr butter, 90 gr flour, 1 teaspoon salt, 1 teaspoon white pepper, ½ teaspoon nutmeg, 50 gr hard cheese (pecorino), 1 egg
