Excellent video! I've started experimenting more with herbs and spices since starting the Mediterranean Diet two months ago. I didn't know I liked mint, parsley, and sumac! My favorite spice blend is homemade dukkah. Love your channel. ❤
Oh, me too.... originally I planned to include dukkah in the video and felt it was just strating to feel al bit long or overwhelmed with info or both! But you are so right, that nutty spicy combo is a easy go to flavor boost. Thanks for mentioning it in the comments! Cheers, Caroline
Another, awesome video. 2 years ago, i started my first raised bed herb garden. I am having so much fun with fresh, dried, and frozen herbs. But still learned so many delightful tips from this video. The picture in the background is one I shot when I went to that saffron farm to watch the harvest and it's one of my favorites. Pretty inspirational for me in the kitchen. Great video, will help me a lot. Only thing is I don’t like thyme or rosemary so not used. All the others are so wonderful to use
As I always say, you do you! So if thyme and rosemary don't work for you, no biggie, there's a world of spices and herbs to get to know and love! C
@ it’s funny cause I like coriander/cilantro whereas my daughters think it tastes like soap. In australia we call is coriander and arugula is rocket here. No idea but we are a rather different mob.

Such thorough information and advice! Do you use garam masala? I use it for Tikka masala but would love to know other applications. Thanks!
Yes I do use Garam masala, especially for fall season stews with squashed and dried fruits. So warm and cozy and I love the way it makes the kitchen smell! Of course, it's a classic with tikka masala but you probably know it can enhance all sorts of other dishes, especially ones with chicken or pork and apricots and onions! Cheers, Caroline

Wanna come over for a little cup of something warm and healthy...? ;) That picture is one I shot at the saffron harvest I mentioned in the video. A big beautiful basket of saffron crocus flowers ready for the harvest rooms. Such a spectacular memory for me, a day I won't forget but love to have the reminder on the kitchen wall! XO Caroline

Great video Carolyn. I bought some saffron on our trip to Spain and haven't used it yet. What's your favorite way to use it?
Hi Kimberly! How are you? Sorry it took a bit to get back. I just returned from my fall week vacay to Paris! Of course, you would buy saffron on that trip to Spain...lucky you. Of course, my favorite is in a paella, but I also throw it in other soups (esp butternut) and veggie stews. Last week, I added it to a fall season chunky soup. And I paired it with apricots to make a sorbet last summer with our farm fruit haul. Of course, as you know, it's still expensive even here so a little goes a long way but that floral, fragrance is a real favorite of mine. Just remember to steep it first! XO Caroline

Very helpful video! I just discovered herbs de Provence. Trader Joe had some and I’m not sure exactly how and when to use them. I have sprinkled them in scrambled eggs, & seasoned meat (chicken & fish) and veggies with it. I love the taste even if that is not how you typically use them. I would love a recipe that featured it.
Hi Jan - If memory serves me right, there's a recipe somewhere in the back videos using it but frankly, I can't quite remember (ha ha ha), but I will use it in a dish in the near future. I love to just sprinkle it on large diced potatoes with some olive oil and throw them in the air fryer for nice flavorful crispy side to a piece of grilled fish. And of course, it's a natural to use when seasoning roast chicken! Plus lemon is a perfect flavor partner with it, as is sauteed fennel and onions! Cheers, Caroline
