They couldn't use anything they hadn't yet filmed, and couldn't use what the writers had already written... which was the ending of the first half of the season. So all that build up had no pay off... if you watch the commentary on the second season they show the story boards for what was supposed to happen, and it was cool.

Even rapid cell regeneration doesn't make you a true Immortal. Her body can still be damaged which mean she can still die. Instant incineration is one way, you can't regenerate if there's nothing left to regenerate from.
She got blown up in a nuclear blast and came back bro... I think her immortality is on Deadpool level. So maybe not decapitation or incineration but it is possible she can croak

Was always curious, why people in american movies, immediately start to freak out when they discover superpowers. It is understandable, when this superpower is hurting its wielder or someone around him without his will(like that man, Ted, who emiitted high levels of radiation, or Sylar, who had the urge to cut open other people with powers), but when its something like super-regeneration? Flight? Telekinesis, mind reading, time stopping, teleportation... I think, most people would gladly give everything they own for such power.
note how she's several attempts into trying to kill herself at the start- Claire's not freaked out because she's got powers. Well, she technically is, but that's mostly because without them she'd not be doing anything at all. Probably the worst power to have when actively suicidal- if anything it looks like she was freaking out due to not coping with normal teenage pressure, and sans powers she'd just be a sad memorial in a local paper.

I believe, anyone with IQ higher than their age, would carefully test these powers first to find the limits and then use them, if possible - to get rich or to reach other goal they think is important.

The last sequence - horribly-burnt Claire regenerates as she moves down the walkway to her family on the sidewalk - was given far more time and money to film than usual because the producers wanted to make it as realistic as possible. Two stunt doubles, a LOT of prosthetics, and CGI all combined to make it so.
