- Anthony Mangieri has been described as a religious figure in the world of pizza. His Neapolitan pizza is naturally leavened, never refrigerated, and feels remarkably complex for all its simplicity. In 2009, when he moved Una Pizza Napoletana from New York's East Village to San Francisco, his cult following was dejected.
Lucky for us, Anthony's East Coast personality never fully adapted to the West Coast life, so he's back. Unlike in the past when Una Pizza Napoletana was mostly a one-man operation with a limited menu, Anthony has teamed up with the chefs behind the Lower East Side's Wildair and Contra, Jeremiah Stone and Fabián von Hauske Valtierra. Una Pizza is back in New York and we couldn't be happier.

I can't even lie, my very first job back in 2012 was flipping pizza for $8/hr, and even though I'm glad to have gotten outta food service, watching Munchies (especially The Pizza Show) makes me want to go make pizzas again somewhere just for the craft of it. I was working at a Brooklyn style (thin crust) spot. I loved tossing it up into the air to get it stretched perfectly thin, my dough always came out better than my coworkers' dough (lukewarm water, poured very slowly), I loved seeing the finished product come out of the oven, and there was ALWAYS food to take home for the night ^_^
i'm visiting nyc in august and this is my number one stop. so excited.

Frankly, his pizzas don't look good. Seems like he uses too much heat, it burns some spots, maybe still uncooked inside. I think he wants to make too fast, rushing to make more money.
Most Neapolitan pizzas have the char spots.
It's just a different style. It's basically what pizza started out as, before it got americanized. It's made to be eaten with fork and knife, the crust is extremely light and airy, and the char spots add flavor. A different type of flour is used, so the black spots add a sort of smokiness, and don't taste bitter like they normally would.

Anthony is a true amazing artist! I will never forget his wonderful love, kindness & deep respect for his 2 adopted mothers, JoJo & Margaret Ruta of 12th Street..He gave them auch joy in their daily conversations! They teuely loved him as their own. ❤❤❤ Let me add the little knw story of Anthony ' friendship w/ the 2 beautiful Sicilian American sisters of 12th Street between 1st & 2nd Ave, when Margaret Ruta was short of basil for her cooking she would call down to Anthony & he would happily sent up 1 of his staff w/ fresh basil, or try to never charge the Ruta Sisters & their companion, Margaret Hearn for the pizzas enjoyed every Sat after 4 pm Mass. Margaret & JoJo tried never take advantage of Anthony's generosity & would often avoid the place as nt to be seen as abusing their friendship, they just LOVED talking w/ Anthony about the joy of his Italian ingredients. Anthony was a true gentleman who often send gorgeous flours when JoJo was in hospitalized as well as take time to visit the 2 sisters in hospital. It ment so much to them ..God Bless you Anthony & your family.

I find it difficult to go to more artisan hip places. We have them all around us and many of them have great food, but the best meals in the city are at tiny spots, hole in the walls, convenience stores, the types of places that rarely get noticed unless someone specifically tells you about them. Like I can't imagine sitting down and tipping at a place serving pizza when there is mind blowing pizza all over the place I can swing by and pickup. The best food in Philly might be at this tiny pupuseria. It's incredible. Anytime I spend money on food I compare it to that. "I could have the greatest massive burrito in the city for $8 or sit down and spend three times that on food that will struggle to compete"

@@AgenteET786 he has used yeast. Yeast obtained naturally from the flour. Not commercial yeast...instant or dry active... .. it's naturally leavened dough ...what people refer to as sourdough..although it doesn't necessarily have to b sour in taste.... ..

Actual Napels Pizza is totally different from how you'd see your average pizza in the US or the rest of Europe basically. It's absolutely delicious though! This guy's on the right track. Oh my God when I saw that burrata... I instantly got hungry. Good burrata is *delicious* and when combined with a good pasta? You're in for a treat!

Why are you guys being so critical? He clearly has a passion for the craft and any cook knows that automation isn't always bad. NYC tap water is one of the best in the world and the owner DOES have something special because no two pizzerias are the same. Give him some respect.

I stand behind of what he says. I make pizza dough at home 5 times a week and the process is never exact the same, which can be very stressful (see 9:30)! The fermentation process varies, sometimes the dough is very sticky, sometimes it is weak, sometimes my oven won't reach the temperature I want... all that stuff. Yeah, making good pizza dough is difficult and stressful!

I'm making pizza's a few days in a row now, i dont have a oven that does higher than 230C/450F.. so i had to improvise.
If somebody is interested, just add the tomatosauce to the bottom, put it in for 10 to 15 minutes, then quickly throw the toppings on, put it back for another 10-15 minutes untill it looks fucking delicious.
Reason for this is, so the topping doesnt get overdone, because the crust takes a long time to reach a nice golden crust on low temperature.
Also another tip, try to put a little bowl with water on the bottom of the oven, it will simulate the moisture from a wood oven so the crust doesnt get TOO dry and hard.
If people have tips for me, feel free to respond.
Have you tried getting a pizza stone. My oven tops similar to yours, but with the stone it takes maybe 5 or so minutes to cook.

He is American. In Italy he is not Italian, but he probably is a bit Italian in ancestry although he does not look full Italian. His product is excellent from an Italian point of view though.
