Today I bring you my version of the restaurant inspired chicken korma made in an air fryer in just 30 minutes. This is a quick and convenient way to enjoy this flavourful dish.
This takeaway favourite is perfect to serve with fluffy rice or naans. I’ve stuck to simple ingredients you’ll be able to find in your local supermarket.

Ingredients (Serves 2):
700g chicken breast fillets cubed into medium sized peices
35g of unsalted cashews
45g pre fried onions
1 tablespoon of demerara sugar or caster sugar
1 tablespoon oil
1 frozen cube each of ginger and garlic or 1 tablespoon of the paste or puree
1 teaspoon of salt and Kashmiri chilli powder
1/4 teaspoon turmeric powder
1 tablespoon desiccated coconut
Korma masala:
1 teaspoon of coriander seeds and cumin seeds
1/2 teaspoon of cumin seeds and black peppercorns
1 cinnamon stick
4 green cardamon pods and 4:cloves
1 tin of coconut milk - 400ml
250ml water
2 medium disposable foil trays

I can recommend the Aldi full fat coconut milk, it’s really creamy and less than half the price of the Blue Dragon ones
I never expected that to taste that wicked, shocked and happy plus full . The added coconut sprinkled heavily at he end was the final touch :)

I have put ground almonds in mine in the past when I had no dessicated coconut. What is your opinion on that? 👍🙏🏼
If that's what worked for you then carry on. I love the texture of desiccated coconut in mine along with the cashews. It adds to the authentic restaurant style flavour.

Could you do a series/ video on cookware? Pans/pots for the most part. Trying to recreate my mums.currys on cast iron/ stainless steel/ none stick and can't seem to recreate the results she gets with her decade old cookware.

What a wonderful and well explained recipe. Can i please ask what dried onions you buy and where from please?
Thank you so much! The brand I used is called Al Noor crispy red fried onions. I got these from my local Asian supermarket and these do not have a flour coating on them like other brands. Fudco brand in Sainsbury's is also good.

I tried to make this in my instant pot but the burn sign came on so I had to transfer to a pot and cook on electric stove. Can you share how I can make this in my instant pot please. I’m thinking the coconut milk is thick so maybe that’s why the burn sign came on? Should I add more water? I pressure cooked on high for 15 min in instant pot. Also can we make this on the stove? I
