damn bro u did the adobo justice! Especially with the more vinegar to soy sauce ratio. Typically my Ilocano fam uses brown sugar instead of rock candy, and only certain regions/families use coconut milk but it's not common.
Get episode guys. If you’re looking for more healthy recipes I often use the charcoal grill to cook the protein and veggies and then cook rice or potatoes inside which leads to minimal clean up. Some veggies I don’t see grilled a lot that I love are halved avocados or artichokes (pre steamed for artichoke) with olive oil, lemon zest, salt pepper garlic and then cut the lemon in half and grill that too and it’s gets sweeter and caramelized to the squeeze over the veggies and protein (you get more juice out of it too). I also like grilling cauliflower with a turmeric curry type seasoning that always turns out really well. The grilled lemons are especially good on fish and chicken. I normally start up the charcoal and do all the prep while the grill is heating up. I know you guys have a lemon tree, but I highly recommend planting an avocado tree, other citrus (our lime tree produces like crazy), figs (great for smoke wood too) and perennial vegetables/fruits like artichokes and strawberries bc they require little to no maintenance and do super well in LA. I even grew bananas in my backyard (blue Java bananas) in la that were incredible and I got like 50lbs of bananas if you have the space too (I can give you a young banana plant if you want I have tons growing).
Taro? Ginger? You’re killing me Smalls! Smash whole garlic, that jar of garlic is basura. Instead of water: sprite. Skip the sugar. Blend full fat coconut milk & pineapple then toss in to braise. Skip the soy sauce and go salt or fish sauce, black Swan & datu puti soy sauce is basura. Meat needs to be marinated in this before braising. Also, at the end, Sauce needs to be reduced to thick consistency and meat fried/blow torched before serving. You’re welcome.

i might get flamed for this but ive been adding a little bit of black bean sauce to my adobo and its a game changer.
