It relates to the number of 'ranks' I.e. lll means three ranks and lV means four ranks, which is 3 or 4 pipes for each note voiced on higher harmonic sounds, which adds texture to the sound, mixing the harmonics.
I thought that was very interesting - good to learn about the different parts of the organ and how it all works.

What are the stops on the sides of the Manuels
Pedal stops on the left, couplers on the right.

I've never quite worked out what the roman numerals under mixture stops mean - could anyone enlighten me?
