That is a very accurate way of making a caipirinha. At least the way I was thought from different bartenders in Brazil

That looked like a lot more than 1 tbsp - is that right? I have no reason not to believe you, just visually looked like more in the video, even given the perspective
@@mattparsons946 If equal parts lime and sugar, then it should be like 2 tbsp. 1 lime yields about 1 oz (30ml) so it should be 2 tbsp sugar

@@pauloamw indeed. This whole "peel the lime" nonsense is way over the top. Have been making/drinking caipirinhas since times immemorial and never seen anyone ever peel the fruit. Even the pith is a fairly recent "Nutella" trend

Use very fine white sugar. The amount depends on how you sweet you want it, go for 1 to 2 spoons

I’ve tried all kinds of cachaca, looking for the best to make the perfect caipirinha....I keep going back to 51.
It’s the least expensive, but I find makes the best caipirinha.
at least from where i'm from, we usually prefer "velho barreiro", which is the one he is using in the video, around the same price tag as 51, if you can find where you live.

Two questions: I have heard they should be mixed, not shaken, to be "correct" in Brazil. But then again, my firned bought them from vendors on Brazilian beach areas and they were all shaken? Also, why did he leave the white on the outside of skin and remove most of skin. But then again, my firned said the ones made on the beaches had some skin removed to, Is it not less flavorful if you remove most skin?? I find the quality of tastes highly varies with the brand of Cachaca. Some taste like solvent.

Yeah, I thought removing the skin seemed weird. It's exposing more pith, and also you're losing out on the citrus oils contained in the skin. seems like a lose lose to me.

Wow, I was trained slightly differently from a Bahian restaurant owner, but I like the treatment of the lime here because my caipirinhas were indeed more bitter. My local liquor store sells Yipioca which is way, way better than the cheap 51 brand. Use the better Cachaca! I found LeBlon a bit over priced for its flavor compared to Yipioca.

First I messed it up, then I came here.
i would pour the cachaca in, before you put in the ice and stir it, because cold liquid doenst let the sugar melt.
the out of solution sugar is part of the way the drink is served. It's about texture

Differs from the German Caipirinha Version. We use brown sugar and crushed ice.
Sorry-“bitter” is what gives the caipirinha its fabulous edge. What’s the point of muddling sugar and lime juice without the peel? And pith!

You remove all the white stuff from the middle of the lime, after cutting off the ends and then cutting it N-S, but not all the white stuff below the thick green skin. Why not if they are the same stuff with the same effect of reducing sweetness?

just discovered a huge mistake in this video, that confused me, when i first saw this vid some years go and tried to make this drink the same way!!
at 1:49 there is a cut that shows the shaker just after muddling and then a closeup to it, pretending that was the result of the muddling... but it isn't
The tradicional caipirinha isn't shaken in the cocktail shaker. Bars and restaurants have the habit of using cocktail shaker, because it makes the process faster, the taste smoother and the alcohol more integraded.

He cut out all the zest, that's where the aroma is. Cutting out the core is correct. Cachaça is a muddled drink, not shaken. And he used some pretty cheap crappy cachaça, there are hundreds better cachaças If you know where to look.

Be careful with these cheap ones you find at supermarket shelves, they mix raw cleaning alcohol with it to fill the bottle, it's not the whole thing made of pure unadulterated cachaça. Honestly, I don't even know if "boutique" brands will have the legit stuff. You will find the "real" cachaça from small farmers on the countryside, and these ones you can drink raw they taste good. For the ones aged in wood search "cachaça envelhecida madeira", these are the places which do the correct process for making them
If you need any let me know, I have to figure out a way of exporting it or shipping it somehow. I know a guy who makes these, now with the cheap dollar we might consider exporting it, would be easier for us. One litre bottle goes for around 20 bucks. I will talk with him to see if there's the possibility of making small bottles for tasting samples, also cheaper to ship those. Reach out, let me know.

Pitty that people through away the lime peel,..all the fine oils and aroma is gone,..

Only halfly executed proper.
Dont cut away the skin. This is where you get a lot of aroma and flavour...
if you want to reduce the bitternes first cut the peel away thinly without the piff to use the peel.
then remove the piff of the lime itself....
By leaving the piff on the outside as shown you actually get much more bitterness than with peel on....that step was kind of useless this way
