I have never tried making chicken pickle.
As chickenn is quite tender.
But beef pickle yes. But a different recipie.

I usually shell the prawns and then weight it.

Recipe is good ... but why your suggesting to add water ?
Vinegar only is a must . if water added , pickle will get spoilt.

This pickle has no shelf life from what I could see of the preparation. One never adds water to thin the gravy or add wet curry leaves at the end.
Prawns or fish pickles are always refrigrated ,so that it stays longer. I have asked to keep it fridge. We use this for six - eight months
People you have tried it put and liked it also.
