As someone from Philly, I was shocked by how dead on this tutorial is. Most places outside of Philly do crazy stuff like bell peppers and mushrooms, marinara sauce, or weird cheeses.
Also, most people think Whiz is the original, but Whiz wasn’t invented till 1953. The cheesesteak was invented in 1930 using American cheese.
Finally, Josh totally nailed it with his brief caveat about technically needing an Amoroso roll. Us Philly cats use the Amoroso long roll for everything: cheesesteaks, hoagies, breakfast sandwiches, etc.

YES. I agree. Growing up we mostly got cheese steaks from Dalessandro's in Manayunk, and my go-to order was with sauce and onions. None of that mayo and peppers nonsense. Little did I know that just across the city on the east side there were shops that would refuse to put sauce on your steak, because they thought that made it not a real cheese steak! Food can be hyper regional sometimes.
I get the Amorosa rolls for everything. They're so easy to get across at least the east half of PA and they're so good.
I do put sometimes put marinara on my cheesesteak though.

making these with cheap flank steak also comes out really well.
If yer somewhere that has it, look for milanesa (sp??) its already thinly sliced, you just have to cut it into ribbons.

Check your grocer. Restaurants and Steakhouses present an inflated price in comparison to decent sized "Do it at home".

As a Philly native, this brought a tear to my eye. No other tv chef has ever been faithful to a true Philly Cheese steak. You nailed it all. Go Birds!!!

That’s not a cheese steak. I’ve made one from scratch with a rounded frozen rib eye that I cut thinly with a meat/deli slicers. If you put wiz on a cheese steak. You either like pats or genos. And nobody in philly recommends those places. Only solid slices of cheese go in a cheese steak to melt and mix well together as it finishes cooking.

I just have to say, I don't know who approached who about Josh (along with Nicole and Trevor) having cooking shows, but I'm so glad these got the green light. They are funny, informative, and all of the Mythical Kitchen programming has become a staple for me. Keep up the great work!

The Brass Rail is the name of my favorite bar in my city. So when Josh said "8 year old me loved you" I sorta forgot that maybe possibly the two establishments are different places and that unlike me, Josh was not an alcoholic 8 year old.

I was at a movie theater once and I saw a kid go to the concession stand and order a popcorn. He paid for the popcorn but he didn't buy a movie ticket. When asked about it, he said that the popcorn was for his mom back in the car and we all had a good laugh!

Allentown is a ghost town. It is the most depressing place I've ever been to. Bethlehem is alright though.

This made me miss home. I used to work in a truck stop/gas station in northern PA and my main job was cooking and cheeseteaks were our biggest sellers and my favorite thing to cook
As a guy born and raised in South Philly, I appreciate you did not do what most internet videos do...put peppers on it.
I moved to California from Pennsylvania for a while and you won't believe the abominations they called "authentic Philly cheesesteak". One place used toast, mayo, tender tips, provolone cheese, and green peppers. Had the audacity to call it "The Philly". I spent MONTHS looking for a decent cheesesteak. Had to wait til I moved back to PA to get one.

1. It's not a suburb of Philly. We're about an hour north of Philly in the Lehigh Valley area.
2. The Brass Rail is still open and doing quite well. Best Cheesesteaks outside of Philly for sure.

As someone who lives in Brisbane, Australia, I just learned that a real Philly cheese steak does NOT contain cream cheese. It's odd to me because we have product specifically called "Philadelphia cream cheese" and I always assumed that was what gave the sandwich its name. Ya learn something new every day!

Philly native here...Josh, I love you and I love that you cooked a proper cheesesteak (albeit the abomination of a roll from Subway). However, Allentown is NOT a Philly burb! It’s about 60 miles away 😂
