I like this and been cooking for a while a it never ceases to amaze me the flith and depravity that I see coming from from hospitality people but its all just a cleaver ploy to mask the commitment dedication and self sacrifice that is required to succeed in the food game. For those of you wondering what he's using as a casing, it's called beef bung. It's the appendix of the cow (not the lower intestines) because the appendix has a closed end. Before you say ew, this is how all sausage used to be made and some dishes are stuffed into the stomach too (haggis). Modern casings are now made from collagen, cellulose, plastic.... I'd rather have to traditional stuff!! Nom nom nom
Yeah, you are probably right about that. I do know NJ as a whole is probably one of the most diverse states in the entire country, though. As for the spread between South and North... I really don't know. I spent about 5 years in South Jersey, though

Im a restaurant owner in china, from my perspective, authentic chinese food is not authentic anymore when its made outside of asia. You get your ingredients such as spices, peppers, meats, tofu, condiments etc.. in the Western world the food isn't authentic anymore! The food have already made to fit the western standards e.g. cleanliness, oil use, food content build-up etc.
Philly is a great city. Everyone is nice, and it's a beautiful town. Before I ever went there, I had a bad view of them from sporting events. They're not so nice at those, when they're in other states. lol
I have a local restaurant called China King. Same 5 people work there day in and day out. Dirt cheap prices, HUGE portions, and tons of msg and salt. Needless to say its my favorite place in town XD
Han should get his own show.
