Spent the last 3 days cutting 6 pallets of rib roasts and come home to watch a video about rib roasts, I can't escape them right now. Great video, I tell my customers all the same info.
Also hate the "prime rib" name it's gotten, my store calls the choice version that and we're also selling prime graded ones confuses customers. I've heard that name came from the roast being from the rib "primal" and also that restaurants just started calling it that to sound premium and the name caught on. A name I never thought I'd hear for them though is what our competitor store down the street has, "semi-boneless ribeye roast".

You’re out there doing the Lord’s work 🙏🙌 thank you so much for watching despite most likely being rib-roasted out! I wish I could articulate how validated I feel knowing that you also hate it being called a Prime Rib. I definitely think marketing has a big part in this confusion -.- I cut out a whole rant about it 😂😂 And thank you so much for providing the lore of it being called that because of the rib “primal”! I hadn’t heard that one yet! Also my actual face when I read “semi-boneless ribeye roast” 😟😟😖

It is because of where the roast is cut from.

Prime to me refers to the first ribs which is prime rather than referring to the grade.
If you think it’s about the meat grade the same holds true.
Prime rib comes from prime graded meat.
Anything else is just a rib roast not a Prime Rib.
You should NEVER break it down into smaller pieces. Only a non cook would do that.
The roast that you have I would walk on buy in the store.
My meat gets trimmed before I pay for it.
