Thank you!!
Hey can you share with me a recipe for beef ONLY bratwurst including the spices and measurements. This is genuis. I dont eat pork
You could totally follow the same recipe I used and swap out the pork for 80/20 ground beef instead!! Here are the percentages of ingredients I used (this is also found in the description of the full video): Meat Weight x percentage = amount 1.5% Kosher Salt 0.3% White Pepper 0.1% Nutmeg (or Mace) 0.1% Ground Coriander 0.1% Ground Mustard 0.1% Ground Ginger 0.05% Allspice 0.05% Ground Cardamom 0.01% Ground Clove (optional) 5% Cream I used hog casings, but the same brand also offers other options like sheep and beef casings. Here is a link to a beef casings option that is the closest in size to the casings I used. They are a tad bigger: a.co/d/2NV3xXb I hope this is helpful!!! :-)
Awesome channel...any chance of breaking down a chuck roll in the future?
Thank you so much 😊 yes a whole chuck roll video is on the docket!
I just bought a 14.68 pound strip loin today at Chefs store for 6.79 per pound!!! I think I saved some money :)
That’s such an excellent price!!! We are both jealous of you and happy for you 🤣
Truly inspirational but I can't decide which recipe sounds better. Thanks for a great video
Thank you! Choices don’t have to be made, you can make both!! 😉🤣
@@TheBartenderAndTheButcher I've just ordered my Prague Pink #1....and I've been watching videos on making back (Canadian) bacon. That sounds super interesting as well. Thanks again.
@@bryanchitwood6488 Canadian bacon sounds super cool! Good luck with all the bacon making!
10/10 thank you for including what muscle it runs into 🤌🏻
You got it🤘😈Appreciate you and the 10/10!
Mmm. You gave great tips. Thank you
Thank you for watching and commenting! So glad I can offer helpful info!!
Yummy 😋
It definitely was!
did you happen to get this barrel from Sofias Findings?
It was actually a gift! So we don’t know where it was purchased from. Sorry! :-)
Thanks for your video and I like the feeling about how you cook bacon
Thank YOU so much for watching and commenting!! We're so happy you like the video!
#2 pig candy ?
Add a little more sugar on top when you bake it and it would make great pig candy! 😏
This was awesome. Looking forward to next Kut and Cook!
Thank you so much!! We're so happy you enjoyed this one! And there's more where this came from 😈
I love how detailed your videos are. The production you put into them especially the different angles when cutting is impressive.
Thank you so much!! 🥹🥹🥹 This compliment means so much I can't even explain! I'm so glad the multiple angles enhance your watching experience :-)))
What do you do with the skin? I can't wait to get all the ingredients so that I can try this. I don't have or want another smoker, so thank you for providing an alternative.
Currently the skin is sitting in our freezer lol. I am planning on making chicharrones/pork rinds with it! I'm so glad this video provides you with useful information and we can't wait for you to try this out yourself! Don't hesitate to comment back here if you have any questions :-) Thank you so much for watching and commenting!
Grilled pork steak is great. I just finished grilling 5 pounds of pork steak. I usually cut them a bit thinner, maybe the thickness of my pinkie finger. With the right seasoning, pork steaks are right up there with a good beef ribeye steak.
Nice video. Thanks!
Thank you for watching and for this comment! We're so happy you enjoyed the video!!

I came across a cut of steak the other day that I don't often see, and I wondered how to cut it myself, and that immediately made me think of your videos. Would you be able to do a video on Denver and chuck eye steaks? I know they're cut from a chuck roast, but I have no idea how to cut them myself. Bonus idea - wtf is a flat iron steak? I get them every now and then, but I don't even know where they're cut from.
That’s so awesome that you thought of us first!! 🥹🥹 Yes! A chuck roll breakdown video is on the docket to get to soon!! And Lolol a flat iron steak comes from the top blade portion of the shoulder! Instead of cutting the top blade muscle across for top blade steaks, to get flat irons you cut longways following along the piece of gristle that runs through the middle of the muscle!
Looks so good! hopefully the leak isn't too bad 💀
Thank you!! And thank you 😂😂
I sure wouldn't drain it and rinse it like she did. You're losing a lot of flavor that way.
You do you, dude.
@@TheBartenderAndTheButcher that's a stupid response
One month and still hasn’t done research. Just assumes their incorrect opinion, is correct. Kinda weird dude. Is that a better one for you?
@@TheBartenderAndTheButcheryou make no sense
Why would you run stock/broth for hours if “a lot of the flavor” is pulled from within the first 5 minutes. It’s because a lot of the flavor doesn’t come out within the first 5 minutes… but a lot of impurities, and things you may not want to eat does. You are working with animal remains here… You’re just shooting an opinion that’s wrong. That’s why we said. You do you.
Cooking! Yay!
I'm always hesitant to cook with sugar in something like this, because I'm afraid of it getting too sweet. I'll have to try that.
Totally understandable! I added the sugar here to balance out the fattiness from the meat and saltiness from the soy sauce, but feel free to omit it and adjust the recipe to your liking!! :-)) and we’d love to know what you think of it if you try making this or something similar!
Proper vernacular or meat cutters terms the Center =Top Butt Heart. The bottom were all that gristle and connective tissue is = The mouse or the Rat. Steaks taken from the Heart 2/3 section = Full face, Mock Strip. When you take that 1st. third off the center you need to follow that gristle line all the way through. Culottes are great grilled or roasted whole then sliced if feeding a multitude of guests.
Thank you for sharing the wisdom! 🙌 Dang, I'm sad we didn't use most of these terms, because "top butt HEART" is a much more fun name lol
Please please please stop flipping camera angles and direction once you have oriented the meat one direction filming only.
I'm sorry if the changing of angles was distracting for you, but seeing the process from multiple angles worked best when I was learning how to do this, so I wanted to offer the same thing in video form. And many others have expressed how seeing it from various angles is helpful. I'm sure you can find single angle breakdowns elsewhere on RUclips 👍
That looks sooo tasty
It’s delicious!! If you try it, let us know what you think :)
Is Ginger Beer NOT a beer?! 😂😂
It is not! There is no alcohol in Ginger Beer and while it’s made similarly, it is not technically beer at all!
@@TheBartenderAndTheButcher well dang, I guess I’ll have to give it a try then! All this time I really thought it was a real beer 🤦🏽♀️

BBQ pork steaks St.Louis style. Using natural hardwood, not briquettes, Sear the steaks over hot coals until they have a slight char. Then slather them with your favorite BBQ sauce and let the fire caramelize them a little. Repeat this process two or three times, then cook them a little more on indirect heat. Next put them in a pot on the grll with a small amount of mixed beer and BBQ sauce, close the lid and let them finish for about thirty minutes or so. When you take them out they will be fall off the bone delicious, guaranteed.
🗃Will be filing this one away for later; thank you so much for sharing your wisdom!!
