You could totally follow the same recipe I used and swap out the pork for 80/20 ground beef instead!! Here are the percentages of ingredients I used (this is also found in the description of the full video): Meat Weight x percentage = amount 1.5% Kosher Salt 0.3% White Pepper 0.1% Nutmeg (or Mace) 0.1% Ground Coriander 0.1% Ground Mustard 0.1% Ground Ginger 0.05% Allspice 0.05% Ground Cardamom 0.01% Ground Clove (optional) 5% Cream I used hog casings, but the same brand also offers other options like sheep and beef casings. Here is a link to a beef casings option that is the closest in size to the casings I used. They are a tad bigger: a.co/d/2NV3xXb I hope this is helpful!!! :-)

I came across a cut of steak the other day that I don't often see, and I wondered how to cut it myself, and that immediately made me think of your videos. Would you be able to do a video on Denver and chuck eye steaks? I know they're cut from a chuck roast, but I have no idea how to cut them myself. Bonus idea - wtf is a flat iron steak? I get them every now and then, but I don't even know where they're cut from.

That’s so awesome that you thought of us first!! 🥹🥹 Yes! A chuck roll breakdown video is on the docket to get to soon!! And Lolol a flat iron steak comes from the top blade portion of the shoulder! Instead of cutting the top blade muscle across for top blade steaks, to get flat irons you cut longways following along the piece of gristle that runs through the middle of the muscle!

Why would you run stock/broth for hours if “a lot of the flavor” is pulled from within the first 5 minutes. It’s because a lot of the flavor doesn’t come out within the first 5 minutes… but a lot of impurities, and things you may not want to eat does. You are working with animal remains here… You’re just shooting an opinion that’s wrong. That’s why we said. You do you.

Proper vernacular or meat cutters terms the Center =Top Butt Heart. The bottom were all that gristle and connective tissue is = The mouse or the Rat. Steaks taken from the Heart 2/3 section = Full face, Mock Strip. When you take that 1st. third off the center you need to follow that gristle line all the way through. Culottes are great grilled or roasted whole then sliced if feeding a multitude of guests.

BBQ pork steaks St.Louis style. Using natural hardwood, not briquettes, Sear the steaks over hot coals until they have a slight char. Then slather them with your favorite BBQ sauce and let the fire caramelize them a little. Repeat this process two or three times, then cook them a little more on indirect heat. Next put them in a pot on the grll with a small amount of mixed beer and BBQ sauce, close the lid and let them finish for about thirty minutes or so. When you take them out they will be fall off the bone delicious, guaranteed.
