I highly recommend trying a garlic & herb butter like Kerrygold. Aw man, now I want Mississippi pot roast. 😫

I'll have to try this again using your recipe. A few yrs ago I made a recipe where you add the entire jar with the juice from the peppers and the flavor was way too strong. Over mashed potatoes is great, and the meat would also make good leftovers as shredded beef sammies on a buns topped with coleslaw and a side of bread and butter pickles. Going to my save list!

There are 3 categories of roasts that work well for pot roast: Chuck Roast - tender, falls apart when finished and easily shredded Round Roast (bottom round, top round) - lean and easy to slice Beef Brisket - fattier option that gets super tender, but can still be sliced for serving You'll be good with your round roast. Just be prepared that it isn't meant to shred easily or fall apart, but rather sliced. The meat doesn't sock up as much flavor that way so consider slicing and then soaking in the juices before serving, or serve with juices.
The cooking process reduces the amount of heat in the pepperoncinis. They have a mild heat if you eat one on its own, but they don't make the meat spicy.
I made this last week and that was what my husband was afraid of too. But let me tell you, not a smidge of heat. The heat cooks out, but the slight tang of the vinegar sticks around. That little bit of vinegar reminded me of Saurbraten beef. Sooo good.

You need an oven safe pot with lid or you can use the slow cooker.

The only way I can think of to burn a pot roast is to cook it at a much higher temperature or for far longer.
