How to make Home-made Ada || Making of Perfect Payasam Ada at Home || Authentic Way of making Payasam Ada at Home ||Ada Making for Ada Pradhaman || Kerala Sadya Special Recipe
(Ada Pradhaman and Palada Payasam are the most important payasams served in Kerala Sadaya. But normally everyone thinks that the making of ada used for this payasam at home is a difficult task and so these days we depend on store bought adas / thick rice flakes. In old days these adas were prepared at home only. Here you may learn how to make these adas at home authentically or the traditional or easy way. The adas made this way are super soft and make the ada pradhaman or the palada payasam super tasy and yummy. Enjoy the ada making process !!!! )
Ingredients Red Raw Rice (Matta Rice) - 1 glass (300 ml)
Pure Desi Ghee - 1 tsp
Water - As needed
Method of preparation
Wash and soak the rice for 3 hours and drain the water well. Grind the rice to very fine powder. Add the ghee and water little by little and make a dough which is loose than the chappathi dough. Wash and cut the banana leaves into pieces and spread a portion of the dough on the back side of the leaf by wetting the hands if needed. Spread evenly and thinly without leaving any gap in between. Now dip a tooth pick or a skewer in water and mark the batter on leaf as shown. Mark the shape as per the size of the adas you need. Insert the leaf as it is into the boiling water. Wait for the leaf to dip in so that you can insert the next leaf over the first leaf. A couple of adas can be inserted in a single batch. Once the adas are cooked, the adas will fall freely in to the boiling water leaving the leaf aside. Remove the leaves from the water. Wait for 2 more minutes until the adas are well cooked. Remove the cooked adas using a siever into a bowl of water. Now the perfectly soft cooked adas are ready to make payasam. Smaller sized adas are apt for palada payasam and bigger size adas are used for ada pradhaman. We always recommend to make the adas, maximum of a day in advance of making the payassam and if you refrigerate the adas, make sure the adas are immersed in water.
