    What's Shawarma?
    Well, you know those greek gyros comprised of a whole bunch of meats sort of combined together into this giant cylindrical slab of meat on a spit? It's just like that.
    But since many of us aren't exactly finding such cuts of meat and spits in our homes anytime soon, I still felt I could bring a hint of this magnificent dish to the Instant Pot!
    Totally unconventional and deviated from a true shawarma (and I'm only focusing on chicken here), it's the flavor and quality that counts and the way this dish is spiced up and prepared, this isn't going to sacrifice that one bit!

    This is our very favorite of Jeff's recipes ~ and we have made most of them all of which are wonderful. We always put a whole cup of broth in, though, because the burn notice is crazy with this one. We have 3 IPs and make sure the seals, etc. are in working order but we get the burn notice most of the time. So, we started to use a whole cup of broth. We, also, use tortillas instead of pita.

    Made tonight, first dish in my instant pot using the sauté function first. Guess my deglazing skills need work, got the burn notice. Opened up, did a proper job scraping and added a wee bit more broth, put back on for 5 minutes.Still turned out absolutely fantastic. Made your tzatziki dip as well to go with it, went great in a pita with some cucumbers and tomatoes. You're two for two with a long list of what I want to try. Hungarian Goulash next!

    I made this last night. It was absolutely amazing. Had a bunch of frozen chicken thighs so I did everything the same but just bumped the cooking time to 10 minutes with a 10 minute natural release. So juicy. So flavorful. I served it the same way you did with the hummus, tzatziki, and raw red onions on a pita. I made some couscous to serve on the side. It was a huge hit! Thank you for all these recipes!

    Jeff Jeff Jeff you are killing me here. I am currently basking in the glory of sloth which followed of course gluttony. I was in the military and spent some time in Saudi Arabia. At one of our locations Wednesday was shawarma night. A local vendor was allowed into our compound and we all grazed on this amazing dish. I have to say this is very very very close to that flavor I remember. I did have to make an adaption to the recipe. I used breast meat as that is what I had. After the pot got to pressure I got a burn warning in about 1 minute. Hit cancel did a quick releases, added another 1/2 cup of garlic broth, deglazed the pot. Set it up for another 7 minute manual. No issues. Did a quick release, hit saute and let the sauce reduce by half then served. Chicken was tender. sauce was awesome, belt line is strained. a win-win

    This is as close to authentic middle east shawarma as you can get. What i do for this recipe is after the IP is done I remove the meat and put it a fry pan over med high heat fro a couple of minutes to crisp the edges so it is more like it just came off a spit.

    nice meal Jeff. Looks like I could make this as my main dish, thicken the gravy a bit, and eat it with rice on the side or even in rice instead of the pita bread or disk. I would need to freeze at least 4 containers as I live alone. I often make chili's ect and freeze it with great success and it's nice on days when I don't feel like cooking.

    I am not on Facebook so I’m asking here.. I am not sure which instant pot to buy.. I have done a lot of research and I know I want a 6 quart and it’s between the duo and the lux version.. the only difference I’m seeing is the low pressure setting and the yogurt setting on the duo. I know I wont make yogurt.. so my question is... what do you use the low pressure for and is the yogurt setting good for anything else? Hope you can help me.

      Low pressure for eggs.
      The new LUX versions actually have an EGG function button so I suspect that might use lower pressure.

  • @szarbaba
    @szarbaba 3 года назад

    you could under cook it in the Pot, and just braise it in an air fryer or pan fry it... it will get you the burnt bits at the edges that are hallmark of a spit fire cooked shawarma. Plus it will dry it out and singe the masala into the mean. Also, if you access to Sumac (for the sour flavour), that was missing in the spice mix. All in all great going. I was born in Kuwait, now at 50, still trying to figure out the best vs. practical shawarmas... cheers.

    Arabic shawarma is apparently different from Israeli. See for example: ruclips.net/video/P4b7muX5S_g/видео.html. I used to live in Detroit and the Detroit area, particularly Dearborn, has the largest population of Arabic people in the US - and the best Arabic restaurants.

    😂 I am from Dearborn, MI where they have the most authentic Arabic food in the US 100% guaranteed. I know you said this isn’t a traditional shawarma so I’m not knocking you bc it still looks tasty. But I do have to say the only thing you were close with was the pita 😂 I was actually a little devastated there was no garlic sauce or pickle which gives it all the flavor. Inspirational sandwich though, good work!
