I see people commenting that a dish shouldn't have this or that ingredient. Remember Peruvian cuisine is all about fusion with foods and ingredients from other countries. The Chifa is peruvian food mixed with Chinese, the tallarines and pastas with Italy. Africans, arabics like the famous cabrito a la nortena. Today we have a great fusion Peruvian-Japanese and the foood is so good. So don't be afraid to try different ingredients and once in a while try to do the original recipe. I think what makes Peruvian cuisine different from others is the quality of ingredients and the time spent in the preparation of the dishes. Most of the food you eat at the Restaurants are like home because the time and care put into by the cook.
It is true, one can cook however one likes, but the problem is when you teach it to others, when one dedicates oneself to teaching, one cannot contribute one's own knowledge but must limit oneself to established knowledge.
We have fusion food and we fuse it with Peruvian ingredients, all the food in the world is fused, the difference is that we have given it our flavor and invented new forms of food. Although it hurts many, our food is the best in the world.

Mountains and Jungle have it s own food.like Chupe de Camarones. icopa, Rocoto Relleno, Queso frito, pastel de papas. Or tacacho con cecina, Juane, ensalada de chonta, inchicapi, from the Jungle. Hello, very good video but I need to tell you a couple of things, first is that the ceviche is made with fresh sea fish and not freshwater frozen fish, second is that the lomo saltado does not contain mushrooms in any way, ever. That cook only taught them his way of cooking but not the traditional way. For all that, if you really want to learn how to cook Peruvian food, you should come to Lima and not do it in Cuzco or anywhere else. Greetings.

What happens is that you have to choose the best restaurants to have the lomo slatado, I dont trust street food too much, because they dont use quality ingredients !!! The best lomo salatdo you get it at Panchita, Bodegon, Isolina, etc. even Otani in Chorrillos.

As a peruvian, I would say that leche de tigre is not the most common (at least in Lima), looks more like a "tiradito" to me, but still, looks delicious
The ingredients are fresh and their technique are unit which make a great food, remember the Incas were the ones who used cook Ceviche and they portrait in their art called Huacos, the Andes, Jungle cuisine and more, no only criolla cuisine (fusion). As a peruvian, i can say that theres no mushrooms and ginger on lomo saltado, and theres no need for garlic.
We had it at some restaurant where they did not put mushrooms. I guess there are many different recipes. It did taste amazing with and without it!
