- Wazwan is a multi-course meal in Kashmiri cuisine. Almost all the dishes are meat-based using lamb, beef or chicken with few vegetarian dishes. It is popular throughout Kashmir.
In the Kashmiri language, waz means 'cook' or 'cooking' and wan means 'shop'. The ultimate formal banquet in Kashmir is the royal wazwan. Of its thirty-six courses, between fifteen and thirty can be preparations of meat, cooked overnight under the supervision of a master chef called a wouste waze. Guests are seated in groups of four and share the meal out of a large copper plate called the traem. A ritual washing of hands in a portable basin called the Tash-t-naer, which is taken around by attendants. Then the traem arrives, heaped with rice, quartered by two seekh kababs and contains four pieces of methi maaz, (mutton intestines flavored with a spice mixture containing dried fenugreek (methi) leaves), two tabakh maaz (twice-cooked lamb ribs, initially braised with ground spices, then browned in ghee), one safed kokur (chicken with white sauce), one zafran kokur (chicken with saffron sauce), and the first few courses. Yogurt and chutney are served separately in small earthen pots. Up to about 20 items are served thereafter by waza (the junior cook). Seven dishes are a must for these occasions - tabakh maaz, rista (meatballs in a red, paprika-saffron-fennel spice gravy colored with dyer's alkanet), rogan josh, daniwal korma (lamb roasted with yoghurt, spices and onion puree, topped with coriander leaves), aab gosh (lamb chunks cooked with a fennel-based spice mixture, cardamom and partially evaporated milk), marchhwangan korma (chicken legs/thighs cooked in a spicy browned-onion sauce) and gushtaba (meatballs cooked in a spicy yoghurt gravy). The main course usually ends with gushtaba. The gushtaba is a large meatball which signals the end of the main course. After that, desserts are served. In winters, the dessert can be a hot sweet dish and in summers, it is usually something cold.

Glad to see wazwan in AJK, most people I meet from AJK are paharis of mirpur, so I am unfamilar with ethnic kashmiri koshur cuisine and culture. Glad to know that I can visit and see true kashmiri culture that you get in indian side of Kashmir.

We would like to watch normal everyday household breakfast lunch dinner snacks etc which are generally served in common man's table at home in Pakistan.
Every region has different cuisine kashmiri cuisine is unlike anything in Pakistan pashtun also love meat dishes from lamb karahi to Chapli kabab it's a whole different story Punjabi cuisine is more of a mix between veg and non veg also sometimes referred to as daalkhors balochis with their different slightly unique dishes like saji etc and then comes the Sindhis who more or less have same diet as Indians n then their gilgiti baltis who have their own mamtoos and shapshoru which is a different ball game with yak meat so it's quite diverse

It's unfortunate to see our kin away from the rest of us. While it is still a bit uplifting to see them trying to create the same flavor, it is really difficult for home cooks. The wazas train their whole life and pass their techniques and recipes to the next generations in a master-student hierarchy, where a student (tsaaTh) studies for more than a decade under his master (wostah) to become a master himself. They are also serving some dishes which are not Kashmiri Wazwan but normal day-to-day dishes like Monje maaz (Kholrabi with meat) or tsaamin (paneer). One should know that Wazwan is a special cuisine for certain occasions. We have other dishes than wazwan which people love like Monje maaz or Haak ti maaz.
BTW one of the things he didn't add in the video description (which I think is well researched) was tamatar tsaamin also known as waaze tsaamin (paneer in tomato gravy) and waaze paalak (spinach with tiny "ristas"). These two are the core of wazwan and are always present. So, the most basic (with least dishes) wazwan meal would consist (in order)
1. Kabab
2. Tabakh maaz
3. Methi maaz,
4. Kokar (chicken)
5. Rista
6. Roganjosh
7. Waaze paalak
8. tsaamin (paneer)
9. marchewangun korme
10. goshtab (gushtaba).
All these dishes are served with Kashmiri rice on a huge copper platter, traem.
Also, kashmiris love haak (collard greens) a lot. It is not in wazwan though. Finally, pulao, yogurt, chutneys and dessert are served separately. I hope more of you get to enjoy these Kashmiri dishes.
U do know that he is in muzafrabad and that is j&k so many people at home do eat these dishes as their staple diet he is just an owner of a restaurant trying to explain the local cuisine to karachiites that's it in fact his billboard says all variety of Kashmiri and pakistani dishes is available so

For my brothers and sisters under INDIAN occupied Kashmir, the culture in Azad kashmir is mainly Pahari with large number of migrated Kashmiris and pockets of indigenous Kashmir valley people. Muzaffarabad is diverse as it holds Kashmiris of valley , the local PAHARIs, Gujjars and huge survivors of Jammu massacre of 6th Nov 1947. So you will find a mixture of all these cultures here. I am from Srinagar who grew up in Muzaffarabad.
