Today was the 4th day of the Kashmiri Wedding, which was the Dawat-e-Walima. The guests were kept limited due to Covid-19 but the KASHMIRI WAZWAN served lavishly. A very fine example of big fat Indian Weddings, focusing more on food. The Wazwan for the Walima comprised of 25-Courses, that comprised of some of the most amazing dishes cooked by this Master Chef of the Wazwan called the Waza. I got to learn the most intricate details and in-depth understanding of this lavish, grand, and exotic Wazwan. The Waza explained the uses of aromatic Kashmiri Chili and Pran or Kashmiri shallots, he also used ghee and saffron to cook the most complex and aromatic meat dishes of the Wazwan. Few dishes I got experience from scratch were, Mutton Rista, Gushtaba, Mirchi Qorma, Roghan Josh, Seekh Kabab, Waza Chicken, Tabakmaaz, Methi Maaz, Haakh, Dhaniwal Qorma, Aab Gosht, Tamatar Paneer, Dahi Mushroom all served as a royal feast in the copper TRAMI for the Royal Kashmiri Feast at this Dawat e Walima or the Kashmiri Wedding Reception.
It was one of the best food and the best experiences of my life.

Exceptional video...rarely see any footage of Kashmir's unique wazwan. I'm pure Kashmiri from my maternal side and as a young boy I remember my late Nana Jan (maternal grandfather) calling the authentic Kashmiri Waza to his house in Karachi to prepare lavish feasts for his guests on many special occassions. The Waza used to prepare everything from scratch, starting from butchering the sheep/goat, grinding the spices, making the cheese from raw milk and what not. It was such honest, backbreaking hard work but always resulted in a grand number of Wazwan specialties cooked to perfection. I also remember that my Nana used to always give him a bottle of Black Label before the preparations began and the Waza would knock back a few rounds completely neat to kickstart his performance! These memories are from the late 80s and early 90s. There is simply no cuisine like traditional Kashmiri cuisine and everyone must try it. Again, I have to say that this beautiful video has truely captured the Wazwan tradition 👏👏

Urdu is a persianised form of hindi nothing else written in a different script. Its not a seperate language. Both urdu-hindi come from old hindi which comes from saurasheni prakrit, so both r 100 percent an indian language
The language is hindutani which bhaijaan spoke here, its distiled pure form taking out the persian-arabic vocabulary is hindi and the persianised form is urdu

Food reflects the history of a community,
The time taken to make these recipes clearly shows that Kashmir was a peaceful society from centuries. If there were in state of war they would be cooking 10 mins dishes, instant dishes.
It also shows the kind of love, affection they had in them, which again reflects in the kind of quality cooking done to serve the guests.

May be history need to be correctly taught in certain community who distorted it from independence in 1947. Kashmir is named after Kashyap Muni. Kashmir was a highly sought spiritual place for 1000's of years before ideological, religious invasions and destruction of the sacred places. Today that barbaric generation have heavily contributed in the destruction of peace around the world. Their end times will be coming approximately 61 years from now.
