Ingredients
Whole Oxtail custom cut to 1.5 inches
1/4 cup of your favorite BBQ rub ( I used my Island Grill BBQ Rub)
FOR SAUCE
1 carrot
Scallions
Garlic
Thyme
1/2 tsp Browning
1 can Butter Beans/Lima Beans
2 cups water
LET MEAT REST AT ROOM TEMP FOR ABOUT 1 HOUR
Coat Generously with oil to lock in moisture and also allow rub to stick. (I used avocado oil)
Coat heavily with your favorite rub.
Place Meat directly on smoker grates at 350°.
Put sauce together in cast iron skillet.
Place skillet on top of firebox covered to get hot.
After 1 hour flip meats and let smoke run.
After 2 hours of smoking place smoked oxtails in sauce mixture to braise and put inside the smoker covered. let cook for at least 1 hour with heat around 250°.

What liquid did you add to the sauce to get it that thin?
I don't add anything to get it thin but I don't add a thickener either.
@@CookinWidKunchi must be some thin bbq sauce your using. What kind is it?
The BBQ sauce I used is Stubbs BBQ sauce and a little water
I am an absolute fan of How to BBQ Right with Malcolm Reed so no doubt when I saw him do a video on oxtails which is a big deal in Jamaica, I was very much inspired. This recipe was dope with my Jamaican twist. Tell me how you like your oxtail cooked.
