At the Home Depot and Lowes near me they have it in several sizes- a 2x2ft, a 4x4 ft and a 4x8ft. The larger sizes have scores on them so they can be snapped into smaller sizes pretty easily. The scores are at construction sizes so 16 inches not 1ft. (The scores are made to fit between 2x4s in walls) To cut them all you need is a utility knife and a straight edge, score at least 1/2 way through and snap along that edge. I think they will cut to size at home depot. I've never tried at Lowes.
I think you could glue it to the surface, but once under tension staples would pull out of the foam. PVA sticks to it really well. I don't know if the foam is archival though.

Could you stretch artist quality canvas over the material?

I don't know if the alcohol in the shellac would eat at the foam or not. It is reactive to a lot of solvents.
