Life off grid isn't much different than the life we had before we moved off grid, except we have a lot more TIME. Time to do the things WE want to do now that we're retired...versus working on someone else's schedule. In this season of my mom-life, homeschooling is my first priority along with the usual homemaking duties; cooking cleaning & lovin' on my sweet family! Come along with us for a realistic day in our life here on our off grid Alaska homestead. We're giving the chickens some outside play time, doing homeschool & making some homemade meat stock. FERMENTED CARROTS: (Makes 1 quart)
Carrots
1TBS Salt (ex: sea salt or pink Himalayan salt, not iodized table salt)
1 Garlic clove
Purified water
1 clean quart jar
Place 1 garlic clove & 1 TBS salt in quart jar. Peel & quarter carrots. Pack carrots into jar as TIGHT as you can squeeze them in. Fill jar with water, make sure carrots are completely submerged. Put a coffee filter or clothe over top of the jar, secure with a string or jar ring. Allow to ferment on the counter at room temp for at least 5 days. (I prefer 10 days, longer the ferment, more tangy the carrots). Remove coffee filter or clothe & secure a lid on the jar, place in the fridge & enjoy! They'll be good for months in the fridge!
MEAT STOCK:
Big pot
Salt/pepper
1 medium onion
2 Garlic cloves
2-3 carrots
Any other veggies or herbs you want to add
2TBS Apple Cider Vinegar
Bones with meat still on. (Your choice, whole chicken, fish, beef bones etc)
Place approx 1-2 quarts of water per pound of meat/bones into your pot. Add all of your veggies & seasonings. Simmer on low for 3-5 hours stirring occasionally. Strain the solids off & pour stock into clean containers/jars & store in the fridge for up to 5-6 days. Can also be frozen!

Sometimes life can seem chaotic, but I know one day it won't be as noisy and I will miss the pitter patter of the footsteps running up & down the stairs, the loud remote control cars & the mounds of laundry.
