  • Is the TCD healthy? Well I’d say yes and no. The whole idea was born out of Brad Marshall being baffled by the French Paradox. The French ate butter, flower, sugar, dairy, and wine and yet remained thin and had a low incidence of coronary artery disease. At least they did in the late 60’s early 70’s. Brad wanted to understand how they could eat fat and refined carbohydrates and remain healthy relatively speaking.
    Brad in my mind and based on the science he uncovered, figured it out, or at least in large part. It was the absence of Polyunsaturated fat and the presence of high amounts of healthy saturated fat that allowed it to work.

    First I want to say I don’t recall Brad ever saying this was the healthiest way to eat, I don’t believe that either. But I do feel there are enormous health benefits that can be had by the guiding principles. Get rid of the vegetable oil and eat more healthy saturated fat, like grass fed butter, grass fed beef, beef Tallow, suet,heavy cream, and unrefined cocao butter.
    I’m a big fan of Dr. Chris Knobbi, and I really like the way he explains the problem with vegetable oil, and trans fats, he goes further and adds sugar and refined carbohydrates to the list of unhealthy things. Based on all I have read, and lectures I’ve heard by him, he believes that Polyunsaturated fat is the biggest driver and that something like 80% of all modern metabolic Diseases start from the damage caused by the factory produced seed oils. I’m also a fan of Dr Kate Shanahan, Nina Teicholz, Tucker Carlson., and Dr Michael Eades. They share a very similar view. It’s not the fat that’s bad, it’s the choice that makes the difference.
    Having said that and having my own personal opinion that they are right after looking at a good portion of the data they reference. So does it make sense from a health perspective that getting rid of the single biggest driver of modern diseases is a good thing? Most Americans are unknowingly consuming 40- 80 grams of Polyunsaturated fat a day. That’s upwards of 720 calories, roughly 1/3 of their daily calories coming from something that our ancestors 100 years ago ate less than 5 grams of a day. Our American ancestors didn’t have an epidemic of heart disease, it was virtually nonexistent 100 years ago. Very low incidence of obesity, very low incidence of type 2 diabetes. Now it’s a full on explosion. Also these people ate sugar, and flour, not to the enormous quantity we do today but it wasn’t something that was avoided or absent from their foods.
    So here is where I sit. TCD is likely way healthier than the way most people eat because it removes in my opinion based on those doctors and researchers I mentioned above, the number 1 driver for all these metabolic diseases.
    Are croissants, and Haagen Dazs healthy foods? I in no way believe they are. I have made it a point to mention virtually every time I bring up the Haagen Dazs I regularly eat that this is not the healthiest choice, or if you have sugar issues you should probably avoid it etc. I also have never said its required, I know this because my best friend Rob has rarely eaten it and he has lost 40+ lbs in just over 6 months.
    Do you want to make TCD into the healthiest version it can be? Ditch the refined carbohydrates in favor of whole food choices it’s that Simple. Don’t eat processed cereals, fiber or not. Don’t eat refined flours white, or wheat. Do not eat processed packaged foods with multiple ingredients. Don’t eat sugar. if you really want the best health outcome possible drastically reduce your carbohydrate intake period. Avoid spiking your insulin over and over from carb dense meals. Load up on grass feed animals and animal products, wild game, animal organs are great, and wild caught fish and shellfish. Eat some fruits and vegetables avoiding carb dense meals. Eat healthy saturated fats. Get rid of omega 6 vegetable oils from your diet.
    I didn’t do TCD initially thinking it was the healthiest way to eat. I did it believing Brad had the science to back up the weight loss this could provide. I wanted to do it and keep to the spirit of the diet. Mimicking the way the French ate. Eating similar foods that I liked that would fit the model.
    I did this and had success far beyond what I imagined possible. I’m literally shocked at the results in 8 months. You may be too, but we are all unique in how damaged our metabolisms may be from years of unknowingly eating way too much vegetable oils, and not enough healthy fats. We all have varying different nutritional deficiencies based around our own food choices. If there are foods that give you issues obviously don’t eat them. I wish you the best of luck if you choose to try TCD, and just maybe it will lead you to learn and grow like it did me. In this growing it may become a gateway to even healthier choices.

    I'm gonna spark some controversy here, but sugar is good for you. Refined carbs are fine as long as you're eating enough nutrient dense animal foods, but fruits, honey, milk and potatoes are better sources with good nutrition.

      No controversy here! Currently I consume 300+ grams carbs a day, 200+ grams from simple sugars. I eat nutrient dense, pastured eggs, grass fed beef, oysters, raw milk, daily, with small amounts of liver. I did not eat that level of carbs when I was loosing the weight, it was roughly 160 grams a day then, with roughly half from simple sugars. I also eat a daily carrot :)

    I've cut out PUFA's for a few weeks now and I've noticed I'm full much longer and I've lost 2 inch's off my waist!

      @@davefit-areyousaturated9830 What surprises me is we have been out to eat a few times and my sons birthday was in the mix but it doesn't seem to matter as long as we are keeping the PUFA's to a minimum the majority of the time.

    Hey Dave, I just want to give you a quick update on my progress on the croissant diet. Me and my wife were following the diet to the letter without much success. When you mentioned two weeks ago that you started to have doubts about the fish oil, we both stopped taking it and we both started to loose weight steadily since then! We didn't change the way we eat, the only difference was the fish oil! It's crazy that such a small detail made such a difference for us!

      How long have you been going for and do you take any additional supplements like Vitamin E and Stearic Acid? I'm one week in and still trying to get my daily routine worked out. I've pretty much eliminated the PUFAs but still trying to fine tune my meals and timing. I was doing Keto and 16:8 IF. I've changed what I eat but still tinkering with whether to drop the IF or keep doing that. The only supplement I was doing was Vit D so reading up on whether I should add E and Stearic. I never really did Fish oil. Had two large bottles in my cabinet but could never get past the burping effect when I took it.

      @@nqcowboy6874 I take creatine supplement for my workout, a multi-vitamine and a little bit of extra stearic acid in my butter from the company fire in a bottle. I do intermitent fasting as well, lunch and dinner. I got great results as soon as I dropped the fish oil and the PUSF :-)

      That is awesome and the more I read about fish oil the more I’m convinced it’s oxidized or contributing to oxidation too! I just stopped taking mine. It’s still PUFA and can oxidize just as easily

    Dave, you don't need to eliminate flour. Eat like your great,great, great grandparents ate. No processed oil and no processed foods. All bad health started in mid 1800's with refined oil and packaged foods. Butter and coconut are the best oils. Eat the meat,potatos and veggies. Don't eat a ton of calories either. You are a rockstar, thank you for your awesome videos!!

      Thank you! Yes I don’t really avoid flour personally, I get most of my carbs from simple sugars, orange juice, lactose in milk, and of course straight up sugar in my Haagen Dazs. I get a little from flour like croissants or bread made with butter, some potatoes or rice.

    Diet compliance, so true. I saw many people said they feel keto meals are disgusting - of course if you're the type who doesn't enjoy fatty meat at all.

    I’m really upset by how much PUFA is in every freaking food item I got in the house!
    Luckily I’m now having quality beef from a local grower who does grass feeding only, we can even visit the farm. No silos around to stockpile silage nor grains, good sign!
    One question that still puzzles me: on croissant’s ingredient list, when I see “mono-di glyceride, does that mean MUFA-PUFA? It’s a cheaper brand of croissants, NOT advertized as all butter. So I’m suspicious.
    I was happily surprised to find actual all-butter croissants at my local Walmart…
    I guess I will start to judge retailers by what I read on their labels! I used to consider Walmart as supplier of poor quality made-in-China-everything. Paradigm shift bid time.
    I concur on Haagen Dazs is really good, but 1/2 pint for me is plenty enough!

    I'm down a whopping .8 lbs. in one week. Daily caloric intake ranges 1800-2400 calories per day. PUFAs are almost zero.

    Awesome work. Keep up the videos. I'm one week in and these are extremely helpful. One thing I'm interested in is learning about is how the body eliminates the PUFAs built up after all these years of abuse. I've been watching endless youtube videos and reading blogs. Lots of great information that makes sense about why PUFAs are bad and how our intake is way higher than they should be but I haven't really come across anything yet that describes how the body eliminates them when we change to this method of eating.

      Dr Chris Kanobbe states in one of his videos that the half life of PUFA in our bodies is roughly 600 days. Dr. Kate Shanahan states basically the same thing. So unfortunately it sounds like 2 years to cut it by half in the body. I’d assume this was without weight loss. I’ve lost 45 lbs since I started surely I’ve eliminated more by loosing that fat. At least I’d hope so. I have a playlist on my channel called “must watch” I feel certain the two cited above have that answer in one of those videos. I have many more video’s planned based on all the questions I get from friends, family, and here. I hope they help. If nothing else I hope I’m helping people understand and get off the PUFA’s.       @@davefit-areyousaturated9830 Thanks. I've seen a couple of references to the PUFA half life but not a lot of discussion. I've also been watching a lot of Dr Paul Saladino. I've been on and off of keto for the last 4-5 years but I always stall out and quit because of lack of energy. I was looking for something that would allow a small amount of fruit and while researching I stumbled onto TCD via reddit. Since starting I've pretty much eliminated all the PUFAs just in the past week. I'm usually good at committing to something once I start. What was interesting to me was all the information presented about chicken, pork/bacon and their PUFA content. It all makes sense now that I hear it but my ketoish lifestyle was based around chicken, bacon, eggs. Very little red meat. I have completely flipped that now so we'll see how it goes.

    I have lost 15 kg on this kind of diet in less than a year. It works. Although I am not eating any croissants and been eating 4 to 6 eggs that are not pasture raised.

      That is awesome! Congrats. My buddy Rob ate 2 eggs a day and lost roughly 20 kg. I’m cool with eggs just prefer pastured if you can get them, they tend to have a better nutrient profile.

      @@davefit-areyousaturated9830 Yes indeed but thay aare hard to get. Besides one 50g egg has only 0.7g of PUFA. So 5 eggs = 3.5g. Not that much.
      Anyways, really appreciate your videos on the diet. There aren't many people talking about this. 👍👍

    I am able to ingest a lot more fat with a croissant or a potato as a carrier, way more than trying to do keto.

    KBB - I am familiar with Ray Peat, I need to revisit some of his work. I have my own theory on why this works with my food choices, but I don’t have the science/an expert to back it up so I’ll keep that to myself. What book by Ray would you recommend?

    Hi Dave, I enjoy your talks. Good stuff! I am 57 yo 6'3" 249lbs including decent muscle but still would like to drop 30-35 lbs. My question is this: I want to eliminate unsaturated fats and am very aware of what I am putting in my mouth now. But staples of my daily include 2 tbs of raw fresh ground pumpkin seeds, 2 tbs of freshly ground flax seeds, and 2 tbs of chia seeds. Can you comment how those things fit in with the Croissant Diet?

      Looking in cronometer You would be getting roughly 3-5 grams of polyunsaturated fat from those sources at those amounts. If you could limit all other polyunsaturated sources I’d say you would be ok. Watch out for fatty pork and chicken as it’s up to 30% PUFA. If results were not what you wanted possibly consider cutting those amounts in half.

    Thank you for the videos. I've been nose to tail carnivore for the 7th year, feel great but after I had had covid a year ago I gained 15 kg changing nothing in the way I eat. I want to give a carnivore version of this diet a try.

      Certainly possible, “suet” beef Talo etc. Main things to avoid would be fatty pork, fatty chicken as these can be loaded with Polyunsaturated fat up to 30%. Do you follow Paul Saladino? Happy New Year! Let us know how it goes.

      I like his content too, am I mistaken or has he incorporated honey and some fruit into his approach? Definitely have too truly eat nose to tail to avoid nutritional issues. He is clear on this for sure. Great stuff!

      @@davefit-areyousaturated9830 Yes, he added some honey and vegs into his nose to tail carnivore diet converting it into a variant of low carb diet which made some part of carnivore community to leave him. He did it after his travel to some hunter gatherer tribe.

      @@grandegulo it makes sense, I always thought the Hadza (spl) ate a lot of honey when they could find it, and some indigenous fruits and root vegetables. I think he is more of an ancestral eater now. I’m kind of glad I personally never thought it made sense to say pure carnivore was the way our ancestors ate. Nothing wrong it if that’s how you want to eat. It certainly is a powerful elimination diet that has helped a lot of people. Best of luck, please report back with your results

    I tried carnivore. Cannot do it. First it's too damned expensive right now and it's going to get worse. Second, I have hemachromatosis and have to watch my iron intake. Right now, doing the Croissant Diet, cronometer is telling me that I am getting 150% of my iron intake and I'm not even doing croissant diet. Then there's the weight gain...25 lbs.
    You should NOT eat liver every day. 4 oz. 1 x week is sufficient. You run the risk of Vitamin A toxicity.

      I only eat 1/2 oz liver 4-5 days a week total consumption is 3 oz or less. You are right about the expensive part for carnivores

    Hey Dave, I would like to share my updates with u~ its the third day of this diet, so far so good!
    The only problem could be that I find it hard to follow a 50:25:25 ratio all the time bc bread is so appealing to me 😅.
    So I am thinking what if the carb part goes up to 30-40%, and fat goes down to 40%, would it still work? Is there anybody arounds u eat like more carbs and get a good result? Yeah I have learned the key is to increase the intake of saturated fat and avoid pufas, but I just don’t know how much refine carbs can affect the outcome.
    Btw, are carbs necessarily refined in this diet? Can I eat only whole food like potatoes and rice? Just fear of overeating refine carbs like yummy bread. And we know the soy oil is garbage, what about some products made of beans like tofu and soy milk? I don’t know if having some (like300g tofu) for plant protein is ok in this diet.

      Refined carbs are not required at all. I eat some, my croissant in the morning, Haagen Dazs most nights, but my best friend Rob doesn’t eat the Haagen Dazs. Rice and potatoes are fine. I eat mashed potatoes with butter and cream cheese for lunch M-F. My dinner is always with a starch and veggies. The ratios are not magic. Those are what Rob and I eat. I’m helping roughly 20+ other friends and family. All together based on the 14 who have reported to me they have lost a combined 224 lbs. many of them just started in the last month and average around 8lbs lost, me at 9 months with 45, Rob at 7 months with 50 lbs lost. Friends of mine Steve and Mandy started 3 weeks ago, Mandy is down 11 lbs, Steve is down 9! I don’t know anyone’s Macro’s other than mine and Robs and another buddy Doug 20 lbs in 4 months. The primary rule is get rid of PUFA, secondary rule increase long chain saturated fat, everything else is optional. Hope this helps.

      I used 3 tbsp a day, it was divided into 2 doses 1.5 tbsp each dose in a smoothie recipe I used.

    Im a kickboxer and i want to try this diet, i eat a carnivore diet on my off days three days a week and on training days (2) i have a high carb, high protein (bread, rice fruit, yoghurts etc) my worry is performance; would this diet be compatible with highly intense exercise sessions?

      I train with weights fairly high intensity and my energy is way better than before. A coworker I’m helping says his distance running time’s, and heart rate have improved. I think PUFA’s would hinder performance because they break your mitochondria’s cellular respiration.

    Man I've been strictly carnivore nose to tail 2 years. It messed my thyroid so much I had cold hands in summer. Just think twice. Carbs in moderation have thrir role, your experiment proved that too, not only the benefit of saturated fats. Don't push it too far, you definetly seem on the right track keep it simple. All these extreme diets are a fad in a way or another. The one you followed for sure was based on the more traditional way of eating that included, not excluded any macro but priviliged quality foods

      I have not completely tried this approach. The bulk of my diet is animal foods, meat, organs, dairy, and eggs. I have used exclusively fruit as the carb source for a few weeks but have not run this as an experiment long term. The closest I’ve come would be 26 years ago, the diet to prepare for a local amateur body build contest. That was chicken breast, tuna, egg whites, sweet potatoes, broccoli, and steel cut oats for the bulk of it. If I had to guess I’d say it would work really well.

      Yes, a modified maintenance version of it. I’ve not wanted to lose for over a year now so I just increased my carbs significantly and reduced my fat a little. Still avoid PUFA like it’s the devil.

      I drink some everyday! I prefer raw cows milk but also drink store bought. Just watch the calories. I drink it mainly for the calcium, b vitamins and protein.

    I agree with you with everything you say but I liked to point out on one thing where I think you are wrong.
    You say that on a meat package if its not indicated 100% saturated fat then the rest is not saturated so dont buy it, dont eat it.
    I looked this up and it turns out that even lard is not 100% saturated fat.
    Thats a surprise to me also since I thought too that animal fat was 100% saturated fat.

      Maybe I miss spoke. I know all beef is a combination of saturated and monounsaturated fat. Yes it too has a tiny amount of polyunsaturated fat as well. I do not think I was talking about meat but rather packaged foods on the isles. They are not required to tell you how much is poly or mono only how much is saturated. So for example if a box of cookies says 10 grams of fat total and 4 grams saturated, I would assume the other 6 were poly. They don’t have to be, you can read the label and see if vegetable oil is listed, maybe they used butter to make them. I’m just saying on a food you are not familiar with if you can’t figure it out put it back. Hope that makes sense. Technically There are no foods that don’t contain all 3 types of fat. I just choose the one where I know polyunsaturated is extremely minuscule. And yes bacon and lard are not goof for this diet which I have covered numerous times. Pigs and chicken fat are loaded with polyunsaturated fat because of what they are fed.

    Thoughts on omega-3 pufa? What about a source that's not oxidised? :)

      Omega 3 work differently than omega 6, they don’t shut down your metabolism like Omega 6. You are right they are polyunsaturated and they definitely can oxidize, particularly when sitting in a jar on a shelf. The best source for non oxidized imho is straight from fish. Preferably wild caught.

      The jury on omega 3’s is still something I’m researching though for what it’s worth. It might be or has been suggested krill oil because of the astaxanthin may be more protected. Also Brad talks about using astaxanthin to help change is torpid (slower) metabolism. Check Brads articles out on fireinabottle.net if you have not already

      Like I said in the video I’d likely never do true carnivore primarily bc I’d want at least a weekly carb re-feed to keep hormones from crashing. I’d be interested to know if the few/only herdsmen tribes in Africa eat fruit. Can’t remember how to spell the tribes name Mossi, Mesia???

      The Masai don’t eat fruit but they do drink milk

      That's been a problem for me, too. So far, I've had to use cosmetic grade by BiOrigin. I might see if Brad can deliver his pure food grade to my country.

    Hi Dave, thanks of everything you are doing here. have you complied a list of things that are a no go, for example here in the UK a lot of things (like our hagandas has 'soy lechtins' in it which I don't think your US ice cream does and I can't tell if that is a no go. Thanks in Advance

      While soy lecithin is not ideal I’d say it isn’t a huge issue from the standpoint it’s used in such a small amount as an emulsifier. You also get some added choline in lecithin which is beneficial. A lot of people don’t get enough unless they regularly eat an egg or two daily. Be carful with Haagen Daz as some of the flavors do have added oils. I stick with the standard flavors chocolate, vanilla bean, strawberry etc.
      As for no goes, all vegetable oil. You really don’t want PUFA’s and lf they are needed for human health it’s probably in the 2 gram a day range. It’s almost impossible to eat Polyunsaturated fat at this low of a level because even animal sources will contain some. Fat in nature is almost always found as a blend of all 3. Some sources being high in saturated and mono with tiny amounts of poly these are mostly found in the animal kingdom, with the noted exceptions of coconut oil and cacao butter.
      Personally I avoid cooking in and storing food in plastic, occasionally isn’t a deal breaker but the vast majority my food is in glass containers for storage and transport.
      I don’t drink tap water unless it’s at a minimum filtered with an activated carbon filter. This removes the bulk of the Zeno estrogens from the water. I also shower under a filtered head.
      I avoid perfumes and fragrances in general. This includes shampoos and detergent.
      I don’t use deodorant with any nasty chemicals, typically use a mineral block type deodorant.
      I mostly avoid synthetic fabrics on my skin. Cotton or wool are best followed by maybe bamboo.
      I don’t use lotions with PUFA’s on my skin either. I have a bar of Beef tallow soap, and some tallow lotion I use on occasion.
      I avoid fatty pork and chicken as they are high in PUFA, I will on occasion maybe once a week eat a lean organic chicken breast or lean pork chop. I couple times a year I will eat some American bacon only because I like it, not because it’s good for me.
      These are just a few things that come to mind. All of them are intended to decrease hormonal disrupters found in our food, packaging, water, and body care products.
