I have experimented over the last six months, adding nuts and seeds. Well, the verdict is in. I gained 5 lbs. I'm going back to focusing on plain peasant food: legumes, whole grains, cabbage, kale, carrots, onions, garlic, apples, and in-season fruit. Still love you, though. Merry Christmas.
We just finished a bowl of this soup, but added a small bottle of Sweet Red Peppers to it since my husband liked that flavor in the packaged soup we used to buy. It was amazingly delicious! The cashew powder makes it nice and creamy. Thanks guys.

Hey guys, I v know most all tomato soups, Vegan, use sugar. However we r I f I nds t eat uou use baking soda in tiny amounts. It slightly raise the ph level which also slightly sweetens. I start with a ¼ tsp dump on a plate and add tiny pinches to taste. This way it's little enough you won't use too much! I ue this even in my vegan mascarpone cheese!

I love ALL the soups in winter! No cocoa for me - it's SOUP when I'm feeling chilled. My absolute favorite is probably minestrone, with the beans, pasta and veggies, it's a meal in a cup. I'm really looking forward to trying your creamy tomato soup recipe; one of my favorites (pre-WFPB life) was Progresso Creamy Tomato Basil. Yours sounds like a contender. Cheers! Yum! A quick dinner for me is Pacific (or is it Imagine) boxed tomato or red pepper and tomato soup plus frozen Kite Hill almond ricotta tortellini or ravioli plus some frozen classic mixed veggies (carrots, peas, corn, green beans). And I snip some basil in there, just like you do. It’s a delicious, quick solution for I-don’t-want-to-cook nights but obviously relies on processed soup and tortellini. Now I’ve got a WFPB soup and just need to find a WFPB option to replace the tortellini… and doesn’t have me cooking this meal all afternoon ; ) For now, I’ll make a batch of this soup to keep in the freezer and accept the occasional Kite Hill product.

We are a bit slow on the uptake down under. No cashew powder yet, but was surprised when I saw at my local supermarket Coles they stocked the peanut powder. Boy did I stock up. But won't work for tomato soup unfortunately. Love you guys. 😍

Genius! I haven’t tried PB2 cashew powder but I’m adding it to my shopping list! Have you tried the cashew PB2 as a substitute for Lex’s cashew cheese? Just wondering if it works for cheese too!
I asked the allergist the other day about trying cashews the other day and he said no way! 😢I’ll try your suggestions. My husband always made our kids tomato soup and noodles and it has always been one of his favorites so he will be happy with your recipe.
So here is what I did. I usually use 1 cup of cashew cream for this recipe which is about 1/2 cup soaked cashews and 1/2 cup water mixed in a blender. I do 3/4 cup cashew powder and 1/4 cup water since I still need 1 cup of cashew cream and the powder is 2 parts powder one part water.
