I made your seitan recipe. A+ for flavor, but it didn't cook through at all boiling it for 45 minutes. I had to do the traditional baking method with heavy duty foil to finish cooking it through. (Anyone reading this who has never done that method, it must be DOUBLE-wrapped and sealed tightly in heavy duty foil, or it can burst from pressure.)
I wonder if it is an altitude thing. We make that ever week and it cooks through each time. Strange. Glad you were crafty enough to find an alternate way to cook.
Unfortunately, your videos have moved more toward using oil (that was a lot in the bok choy pan) and salt/sugar (especially in that spice). I know you are focusing on low calorie, high protein but for me, using any oil/salt/sugar will further me from my overall healthy lifestyle. However, I still love watching you guys! You do you Boo! 💙

You can do this without spray oil for sure in a non stick pan,
It's not that hard to adapt recipes to meet your needs.
