  • Bonjour Everyone! In this video I will show you how I clean a red snapper.

    This is a red snapper purchased in a pack from Restaurant Depot. The eyes are a little cloudy which indicates it’s not same day fresh, but as long as there isn’t a foul strong order, the fish is firm to the touch, and the exterior isn’t slimy, the fish is safe to eat.
    I first start off by examining the fish before using a descaler and a small knife to remove the scales from the fish. Then I use scissors to cut off the fins and the tail. I remove the top fin first, then remove the fins along the bottom. Next, I remove the genitalia which is responsible for the fishy smell that it can sometimes have.
    Next I move to the inside of the fish. I remove the jaw of the fish and the roof of the mouth. I move down towards the veins carefully removing that along with any coagulated blood along the inside spine.
    The last part is most important. I prepare a bath of white vinegar, salt and limes and thoroughly rub the lime juices all over the inside and outside of the fish. Then I give it a good rinse in lukewarm water.
    Voila! That’s it! A clean fish ready to eat. I prepare mine fried by adding my own special blend of seafood seasonings, seasoned flour and then frying in canola oil for 10-15 minutes or until the fish is firm.
