I brought expo 2015 last week, was surprised how fine I needed to grind for the machines compared to previous machines I have used. Such a rewarding experience to see a single stream of caramel coffee coming out of bottomless portafilter

They are a huge learning curve, but the most rewarding machine for sure.
You're right about tamping. The Pav needs lots of heavy tamping to extract all the flavors.
A "heavy" tamp is only wrong when the coffee is ground too fine. 😎

Not dosed as high as 18g, normally around 14-15 depending on the roast.
With the 20g basket I have plenty of room for a big dose, I will be experimenting with the other baskets I have in the future.

One thing I hate is dialling in beans, it seems such a waste of beans but hey, on the other hand nothing beats coffee when it’s dialled perfectly and made by yourself
Thanks for your comment Ruhul, just remember... it isn't wasting coffee if it's all in search of the perfect cup 👍 Every morning we dump test shots at the cafe to ensure quality & season the machine.
@@mitchdoescoffee thanks for replying. I feel like when it’s done in a shop, it can be justified as the beans are being used constantly.
When you have beans at home, the slow turnover of it being used means it starts degrading and I have found to be dialling every two days as the bean profile ages. Which sadly is not so great when I just have one coffee a day.

these la pavoni videos are just great , full of tips and gold nuggets so just keep doing them please ! today I just learned that overtamping doesn t exist which is good to know a think ..next time i will grind a little coarser and tamp with force and see what happens hope the lever doesnt become a bow 😅

The only one who preaches a firm tamp, which was my conclusion after numerous fails and the reason why I came here to confirm whether we are on the same page.
I'm curious, are you using a double wall or single wall basket? This will also make a huge difference to this experiment, I believe.
I ONLY use single wall baskets. Dual wall baskets belong in the bin. 👍😅

Unfortunately, I can't help with your question as I use electric grinders for all of my espresso.
It might be worth jumping on some Lapavoni forums/discord to find out.
Starting out with a La pavoni, and with about the same dose (17 gms) I apparently ground too fine at first. Just took a lot of effort and time to extract the liquid, but no “sneeze “ mess when removing the portafilter. ??? Also, why does the lever handle always raise itself while the machine is off and cooling down, with no portafilter in place? My machine is a pre-millennium.
Ah yes. I often make the same mistake & grind just a little bit too fine... The Coffee Sensor pressure profiler made life alot easier for extracting great cups.
My machine also lifts the lever when off... It's just creating a vacuum when cooling. if you want to avoid this, just open the steam wand. (But remember to close it again before you switch it back on)
I just bought a used machine at a thrift store in Rome. I wanted to test it but i dont have a grinder here.
I couldn't wait so i went to the grocery store and was amazed to find so many kinds of pre ground coffee for espresso. Back home you can only find Illy pre ground for espresso. I tried it once for some reason and did not like it.
So while not ideal at least i got to test the machine. It works great and as a bonus, the coffee was not as bad as expected. Cant wait to get this machine home where i have a nice grinder.

Most pre-ground coffee is not going to be very good... also the grind setting for a lever machine is EXTREMELY important. ❤️
Your scale seems to be inconsistent. As soon as the cup gets warmer due to the hot coffee, the measure seems to increase even though the brewing process has already been interrupted.

Haha. If you don't want to buy a grinder, don't buy a La Pavoni. I used mine with a spice blender for years! Never was happy with the coffee..

18 grams??? I can repeatedly make great 9.5gram shots in my Pavoni.
