Honestly the music made me think this would be one of those videos that starts normal and then suddenly you're mashing raw eggs in the portafilter.

Nice, but with one missing step: the La Pavoni Europiccola needs to have the 'faux' (false) steam pressure released the first time that the water comes to temperature and the thermostat light goes out. This false pressure is created by air in the boiler - instead, you need the water vapour pressure which replaces it once the air is released. Open the steam wand for a few seconds to do this, wait for the 'real' pressure to build, then proceed with attaching the portafilter, lifting the lever and pulling the shot.
I liked the music. But what I liked most, was that of all the clips I have seen on La Pavoni, or any other expresso machine, you're the only one who speaks of the quality of the water that you should use. I had 3 La Pavoni since 1965...and the first tip that I was told was, no matter how good your machine is, or your coffee beans, if the water is not up to par, your coffee will not be good.
And that simple trick works well with any coffee making device that you use.
Kids...don't do LSD or you might compose music like this...need therapy now.

Unreal, your instructions are exactly what I have deduced over barely one year of use with my la pavoni. Having read and watched ever possible instructional article and video available over that time my own personal conclusions match yours.
The Amount of coffee you need depends on the beens, and the thickness of the grind. Also, you should always clean the portafilter basket.... :-)

@@seantivenan9593 You can tell his tamping wasn't done correctly from the uneven extraction coming out of only one side of the portafilter.
Driver Dose Autoblog That means nothing on a spouted portafilter, that’s not to say he didn’t do it horribly wrong though.
@@alex____1 sorry but you're wrong, it does point to uneven extraction, here probably because of cracks, probably because of knocking the portafilter.
Nice tutorial - not fond of the music. One criticism though: @2:20 Do not knock the tamped grind with your tamper. Simply blow off residue and proceed with the extraction. You are creating cracks that wont be fixed with another tamp.
I have been doing that too. It can result in channeling? I'd better stop.

You can know which coffee you used thanks and how much about when to grind fine or large coffee
coffee selection should meet your taste demands. at the beginning a coffee blend with 10 - 20 % robusta, like in a darker italian "bar" roast, will make it easier to produce nice shots and the "crema" might look nicer. in my experience, during time, the "taste" evolves and you will like coffee, that would have tasted bad some years ago.

thanks for the video! I had always trouble getting the perfect shot, it was kind of a lucky game - even when I followed the exact same procedure you did. So my conclusion was that the bean grinding may be too thick of my Demoka gr-0203 and found a small screw which prevents to adjust to thiner grade (no clue why its there...), anyway after removing of that screw I could grind way thiner (took about 5-6 tries) I found the perfect grade and got finally the perfect espresso :) - Im also using now the bigger basket - works better!

Did you produced that music during a LSD trip?
Would it work to lift the lever again after the first extraction and lower it again? Or would coffee be sucked up and clog the brewing group?
I don't think there would be problems of the coffee being sucked up, but I also don't think the liquid that passes through the puck on the second pull will taste pleasant at all

Is this a la pavoni millennium? And that's a double shot basket but you only use 12 grams. I thought the double basket was for 14 grams or even 15, if it's a newer model as yours looks to be. So why the 12 grams?
D Sak thank you for your comment! It is a "EL" or "Lusso EL". The reason for 12 grams is, that in the standard so called double basket it is the most that will fit. For 14 or 16g you need to buy a bigger special basket, which is not included. 12g in my opinion for a single shot are perfect (relation extraction and taste). I also have a e61 vibiemme and to use that machine i needed to set grinder way finer, something that would lead to more extraction in the pavoni, but it is not possible, as you would need much higher pressure and that would probably damage the machine.

What grinder is that?
Finally a decent shot in the video...sadly there are so many videos that show only crappy shots. Anyways, at 2:40 you lift the lever again. Why is that? Why not lift to maximum the first time already? Is that some kind of manual preinfusion of the puck (is that even possible with a lever machine?)?
the second pull( 2:40),after he screws on the portafiller , starts the water infusion. I have noticed in otrher videos ,some people pause after fully rasing the lever for a couple of minutes of pre-infusion before pulling the shot .

Interesting. I see most people pull the lever twice for a double shot, and have seen a several do a double with just one draw. Have you tried a double pull?
I do not recommend to pull the lever twice, it will shift the proportion between coffee and water towards a more watery result; but of course it is also a matter of personal taste! Enjoy
You can press a 1/4 of the way down and reload. But the second full pull is a bitter mistake.
If you tamped the coffee more consistantly you would get a nice steam from each spout ,instead you get one flowing and one dripping.

Which doesn't have a timer. Do yourself a favor and get a grinder with a timer for constant results. Bezzera BB05 with timer, for example.

Why do you rise lever without portafilter inserted into?
Alexander Pivovarov because it could "uncompact" the coffee powder.
Do you leave the second switch off while you do this ?
Miguel G this is a newer version of the Europiccola and it only has one switch. I think in your case the second switch is useful or steam production
They call the second one the "massimo" switch which just heats the unit faster. In either case, your video helped me make espresso with crema for the first time, so thank you very much !
On the earlier La Pavoni, you had a manual switch to select one of two heaters, 200W or 1000W.
Once the relief valve starts to hiss at about 1bar pressure, position 1 maintains that level. For frothing, or to nudge the pressure up a bit during the infusion, use position 2.
The machine here is a later version with an internal pressurestat.

Sorry for my question, but was it a double shot or just a single? How many gramms of café would you use and how long if you shot into two cups?

I only use the "big" basket, and 12g is enough for lets call it 1.5 shot.for two cups at once you would need at least 16-18g, but that doesnt fit, unless you buy a new portafilter and a larger basket. So i would make two coffees one after another. have fun ciao
An other question: how many shots can you make consecutively - is it true that after two or three shots the machine is prone to overheating? Sorry for the many questions but I' m just planning to buy such a coffee machine :). Thx.
After 4-5 pulls the machine gets really hot and remember that also the volume of your boiler is not endless. Of course you still can divide it into two cups per pull and you will still get a perfect coffee,italians call it ristretto. If you always need more than two coffees at once, then it might not be the perfect machine for you. What do you think?
Thanks, usually (daily) we drink coffe just with my wife, two cups per morning. Otherwise I don't really know if I need to be worried that we occasionally invite some guests and than I should be able to serve 4-5 coffes on row?! It happens rarely, but sometimes happens. I hope it will work with this machine.
of course you could buy a more reliable machine with better technical specs, but you will not find a machine as stylish and as puristic as a la pavoni. but always keep in mind that it is a machine for enthusiasts

Don't knock the portafilter with the tamper....!!!!
You don’t hit the group like that ever and then double tamp, first of all unless you want ristretto. You defeat the purpose and disrupt the flow rate.
And second of all you burnt the coffee.

You can tell the puck prep is not good because the coffee is streaming out on one side of the spouts and merely dripping on the other, meaning the extraction is obviously uneven. Knocking the portafilter with tamper clearly is not helping.
