Thats some good roux but you really need to bloom it first before adding place your roux in a bowl and add stock from your recipe to it and whisk it till it gets loose. Ain nothing worser than a big bite of jar roux in your gumbo -pawpaw

Shrimp stew is thicker, usually uses more roux than a gumbo
And shrimp stew doesnt have okra
