The instructions are to make it taste better. U got soy sauce on the rice, its gonna be too salty
They don’t mind because are selling product but unless you’ve been to japan, you don’t actually know. They do care. The higher end the more mastery of the rice so it’s only kind to respect their craft.

How to eat sushi
Step one: put sushi in mouth
Step two: chew
Step three: swallow
Step four: repeat steps one through three until plate is empty or stomach is full
As long as you don’t turn the chopsticks into walrus teeth or spit the sushi across the room because it’s “too fishy”, you’ll be fine. Anyone who tells you differently is too pretentious for you to give them any attention.
