MANGO PHIRNI
Preparation time: 1 hour
Cooking time: 25-30 minutes
Serves: 2-4
Ingredients:
4 tbsp / 50 gm Basmati Rice, washed, soaked, बासमती चावल
2 tbsp Water, पानी
1 ltr Milk, दूध
2 Full ripe Mangoes,पूरे पके हुए आम
2-3 Green Cardamom, roughly crushed, हरी इलायची
1 tbsp Cashew paste (optional), काजू पेस्ट
¼ cup / 100 gm Sugar, चीनी
For Garnish
Mango, slice, आम
Few Mint leaves, पुदीने
Process:
Note: If using partially ripe or slightly sour mangoes, then cook the mango paste in sugar for about 5 minutes before adding it to the cooled Phirni.
1. In a grinder jar, add soaked basmati rice and little water and grind it into a coarse paste. Keep aside.
2. Now, in a large kadai boil milk. Stir occasionally, and simmer for 10 minutes.
3. Now, add in prepared coarse rice paste. Stir continuously for 5 minutes.
4. Peel the mango and cut into slices. transfer it into a grinder jar and grind it into a paste.
Boil the milk till the rice gets cooked completely and Cool till only slightly warm
5. Further add, mango pulp and stir occasionally.
6. Add crushed green cardamom and mix it well.
7. Add sugar and mix well till the milk thickens and turn creamy.
8. Pour it into a bowl, and refrigerate till it sets cool.
Finally, serve chilled mango phirni garnished with a few mango slices and mint leaves.

I made it today and it turned out to be greattt! Just one tip for a beginner, while pouring the rice slurry keep stirring continuously while pouring in circular motion to avoid lumps. I did this mistake and there were few lumps.
Also, I put in Kesar after pouring rice.

Hi Ranveer!!! I'm not very fond of cooking but had to do so during this lockdown. Didi not want to do the same old same old for my family, I started watching cooking shows to get new ideas. I've watched many of your videos and have also commented on them. You have made my life easy with your recipes. I tried this mango Phirni at home. Your recipe gives the ingredients as per 1 liter of milk but wanting to play safe I used only half liter milk. When my son tasted it he said that I made one big mistake. I was scared. He added that I should have listened to you and made the phirni with 1 liter milk. Your recipe and the instructions were so precise that I could not go wrong. Thank you!!!

Made Mango phirnee today it came out excellent. I used Safed mango and it tasted wonderful. Cashew paste definitely gives that nuttiness to the phirnee. Loved the recipe simple and delicious

@@tiktokstarsfanclub1397 Alphonso for Rs100 per kg? Damn, that's one bargain you got there. Generally Alphonso are anywhere between rs250-550 per kg, depending on season, supply etc..
Ranveer , you really did not tell that if the mango is even slightly sour then the milk will curdle. By chance , while cutting the mango , my mom asked me to taste it and one of them was slightly sour. I had my mom to guide me but everyone may not be so lucky. So , please zaroor zaroor Bata dein ki ‘ be careful’ . Another thing, need to keep stirring while adding rice paste and even after adding. Cannot leave for a second or it will start sticking to the bottom and become lumpy. So, prepare everything before adding rice. BTW, I also added cardamom powder and saffron after adding sugar. And yes , cashew paste did make it set better. The colour was truly ‘ sona’. Thank you sooo much for sharing this recipe with us.

But i don't have them right now because it ripens very late. No fertilizer at all.

I prepared the mango phirnee, it turned out very nice. I replaced sugar with jaggery. But it was yummy.
